Same Dish - New Look - The Why......
I've done this burrata dish with caramelized peach, prosciutto, arugula, lemon and olive oil countless times. You've seen me post it a bit. However, this preparation and presentation are different. Want to know why?
Days before this dinner I was told that there would a pregnant guest. Rather than omit the prosciutto which would change the balance of the dish I decided to try crisping it instead. The prosciutto is now cooked which is safe for the pregnant guest, the flavor profile is not compromised and it actually added a texture to the plate that I didn't realize I was missing and needed.
Funny the circumstances that cause dishes to evolve and become better, huh?
