Almost there.....a few weeks left and the doors will finally open! The chefs are fine tuning the recipes, the waiters are rehearsing the service, our back of house team are polishing every plate and the room attendants are making sure all the pillows are perfectly lined up..... A real joy for me to be part of such a unique opening, to witness the true meaning of hospitality and why I choose to work in this industry in the first place. @thechanceryrosewood

It has been a while since I visited NY but this town that I once called home still has the smell, the vibe and taste, I still remember. It’s a special place for so many reasons, but lingering in the background is the voice of my late Grandma Alice. I was 21 and as a young chef, I was feeling unsure and about to give up. But she found the right words to keep me going and stay in this dynamic city - which became of the biggest milestones in my career.

Every year around this time I get my wellies and wander out to forage bear's garlic and wild asparagus to prepare one of my favourite Spring recipes.... ricotta gnocchi! Ingredients (serves 4) - 100 grams baby spinach - 100 grams bear's garlic (wild garlic) - 1 garlic clove - 140 grams ricotta - 85 grams flour - 2 eggs - 100 grams grated parmesan cheese - freshly grated nutmeg. Today's egg are scrambled with forage wild asparagus, chervil, ham, chives and grated Parmesan. Foraging has always been one of my joys! Something I learned doing in the early years of my training as an apprentice.
