The chefs are fine tuning the recipes, the waiters are rehearsing the service, our back of house team are polishing every plate and the room attendants are making sure all the pillows are perfectly lined up.....
A real joy for me to be part of such a unique opening, to witness the true meaning of hospitality and why I choose to work in this industry in the first place.

Today's egg are scrambled with forage wild asparagus, chervil, ham, chives and grated Parmesan.
Foraging has always been one of my joys!
Something I learned doing in the early years of my training as an apprentice. Today wild asparagus, soon elderflower, acacia blossoms, morels, tiny wild strawberries and raspberries....and this until late automne when the last black trumpet will finally disappear under the first frost of the year.
