Q+A With @chefnickwalker Part 4 I Crab Cake 🦀 🦀 What inspired you to create this new Crab Cake dish? We needed a new seafood option in our appetizers section, and I love crab cakes, plus it fits into an American tavern perfectly. 🦀 What makes this crab cake different from a classic version? So its a pretty classic recipe, but its extra moist, and then it gets crusted in a parmesan bread crumb mixture for a super crisp texture on the outside. We serve it with our dill remoulade sauce which really elevates it! 🦀 Tell us about the remoulade-what flavors should guests expect? Very herbaceous, great citrus not to help balance the fat in the cake, and adds a creamy texture throughout the whole dish. 🦀 Our hot sauce is made in-house. What went into developing it, and what’s its flavor profile? So we grow all the peppers from our garden and then we ferment the sauce in house. Its a blend of fresnos, jalapenos, habaneros, ghost peppers and carrots to sweeten and balance the sauce. 🦀 How poes the house hot sauce complement the sweetness of the crab? It’s a fiery touch that heightens the dish, and compliments the crab very nice. The heat is mid level but adds a great peppery flavor to the plate.

Happy 5th Birthday to my oldest daughter, Brynne! You are such a spitfire, full of feisty energy yet enduring constant love, the chattiest person in the room on most days, and always ready to help others. I should have known you were going to make me earn my stripes as a mother when it took 33 hours of labor to birth you. 😉 I love you very much and being your mom is the highlight of every day for me! Q+A With @chefnickwalker Part 3 I Chicken Melt & @slowdoughbreadco 🥖⁠ ⁠ 🥖 What inspired the creation of the Chicken Melt, and what makes this sandwich stand out from a traditional melt?⁠ We wanted to have a cult classic version of a delicious chicken sandwich. Our whiskey cake version of that is a melt, one for ingredients, grilled flavor, crisp bread, and veggies.⁠ ⁠ 🥖 Can you walk us through the flavor balance of this dish — from the roasted chicken and peppered bacon to the fontina and roasted shallot mayo?⁠ The dish is really an homage to a classic chicken club, elevated in a Whiskey Cake fashion. The vegetables provide a freshness with the creamy avocado. The grilled smoky chicken with the gooey fontina cheese provides that multi-effect on the crisp, light, fantastic sourdough!⁠ ⁠ 🥖 Why was partnering with Slow Dough Bread Co. the right choice for this sandwich? What makes their sourdough special?⁠ We need a strong local bakery that provides us with a solid product. Using incredible ingredients is a priority for us, and we wanted to make sure our partners match that credo. Slow Dough has been a great partner for us, as always. He is able to keep up with our volume, and we look forward to working with him daily.⁠ ⁠ 🥖 How does the sourdough from your local bread partner affect the texture and overall eating experience of the Chicken Melt?⁠ It has a huge effect on the final result. It’s able to absorb any extra moisture from the meat and veggies; there’s a fantastic, crisp texture while being white and fluffy in the center, and it holds up to the weight of that incredibly tall melt!⁠ ⁠ 🥖 What’s one detail or ingredient in this dish that guests might not realize takes extra care or intention?⁠ Honestly, it’s the way in which we build a sandwich. We make sure that we put avocado on one side of the toasted bread and shallot mayo on the other, which provides a massive moisture barrier so the sandwich doesn’t sog out. Veggies are always in the center of the sandwich, with cheese and meat on top, so that gooey effect hits your mouth on the first bite, and you don’t have to search for it in the middle of the sandwich. It truly is an art!

Q+A With @chefnickwalker Part 3 I Grilled Shrimp Rigatoni & @dellacasapasta 🍝⁠ ⁠ 🍝 What inspired the flavors behind the Grilled Shrimp Rigatoni?⁠ We wanted to have a pasta that had some heat and flare, that was still approachable. So we wood fired some beautiful 16-20 shrimp and made the sauce with fire roasted tomato sauce!⁠ ⁠ 🍝 Can you walk us through the smoked chile-butter shrimp and what it brings to the dish?⁠ So the shrimp are an incredible addition to the pasta, especially with the Smoked Chile butter, this adds a ton of brightness to the shrimp, and so much depth of flavor.⁠ ⁠ 🍝 Why was it important to partner with a local pasta maker for this rigatoni?⁠ ⁠We partner with Della Casa pasta based out of Houston TX, because they make some of the best pasta we’ve found in the state! Supporting those who make the best of the best is our goal!!!⁠ ⁠ 🍝 How does freshly made, locally sourced pasta change the texture or overall experience of the dish?⁠ The texture of the pasta is phenomenally better than dry, its got such a good chew to it, the mouthfeel is like no other. Della Casa pasta is the GOAT!⁠ ⁠ 🍝 What role do the fire-roasted tomato sauce and chili oil play in balancing the flavors?⁠ The Fire Roasted Tomato sauce is my favorite part! The tomatoes have a unique smoky flavor, and really ups the flavor profile, especially when paired with the Chile oil, I love spicy, and I think this combo gives you a rich flavor without being an overwhelming heat.⁠ ⁠ 🍝 What do you want guests to notice first when this dish hits the table?⁠ I think the components are all gonna hit you in the face with the first bite, but the chile-butter shrimp will stand out for sure at first glance, charred and glistening!
