“Fowl Play: No Boring Birds!” was a playful feast of Filipino and Vietnamese flavours, held at Miss Mi as part of the Melbourne Food & Wine Festival on 27 March. The four-course showcase brought together Chef Migo Razon, Aurum Poultry Co., and food presenter Duncan Lu in a collaboration highlighting specialty poultry dishes with Asian influences. The menu featured flavours inspired by the Philippines and Vietnam, transforming traditional street food favourites and family recipes into refined modern dishes. Guests were served a selection of entrées including crispy anchovy quail, congee with poached duck salad, cornfed chicken dumplings, and stuffed chicken wings. Shared mains included braised lemongrass cockerel, hearty green soup with pork and prawn meatballs, duck breast adobo, and charred eggplant salad with salted duck egg. The meal concluded with sticky cassava cake paired with jaggery ice cream. A dish Inspired by Laing, a filipino stew that uses taro leaves, fatty pork, school prawns, chillies, coconut cream and bagoong. Slow cooked until the taro leaves are tender and the coconut cream splits in an oily goodness. . . This version uses cavolo nero and lumpfish caviar is added for that extra umami. What a privilege to be part of this esteemed brotherhood! 💙🦅 . . As we climb up the hill after 25 years, it was very good to see old friends, acquaintances and brothers for life. It was also great to see our former teachers who were greatly responsible in moulding us to who we are today. . . Ateneo will always have a special place in my heart. I spent my formative years in this school and is a big reason why I am who I am today. Now coming back down from the hill I am filled with renewed energy and purpose . First Christmas back after 14 years of living in Australia. While Melbourne is now home, Christmas in the Philippines still feels so special and will always choose to spend it here than anywhere else in the world.
