Oatmeal + Caramelatte + Pecan Chocolate Chip Cookies
BIG BATCH! Makes about 5 dozen 1 1/3 oz cookies. Great for holiday bakingā¦. I like to bake a few dozen immediately and then scoop and freeze the remaining dough. That way I always have cookies at the ready š
2 cups unsalted butter, room temperature
2 cups white sugar
2 cups brown sugar
4 eggs
2 teaspoons vanilla
4 cups flour
5 cups processed @bobsredmill old fashioned rolled oats (not the quick cooking kind)
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoons salt
3 cups caramelattle chocolate chips or a mix of caramel chips + milk chocolate chips
3 cups pecans or walnuts (sunflower seeds are great substitute for nuts in this recipe!)
Flaky sea salt for topping
Pre-heat oven to 350F
Grab the oats and pulse them in a food processor a few times. Then mix together all the dry ingredients and set aside.
In the bowl of a stand mixer add the room temperature butter, sugar + brown sugar. Cream together for a few minutes until nice and creamy. Then add the eggs and vanilla and mix until the eggs are fully incorporated.
Add the dry ingredients to the wet ingredients and mix until everything comes together and there are no dry flour bits.
Fold in the chocolate chips and nuts.
Scoop onto a parchment lined baking sheet and top each with a pinch of flaky sea salt. Chill in the fridge for about 5 min.
Put the cookies into your pre-heated oven and bake for approximately 12min. Enjoy!

Great food made with simple ingredients. This has always been whatās inspired me to cook and why I love pizza so much. Itās so humble but made well, can be the best thing youāve ever eaten.

My work from home lunch hackā¦
Par-baked eggplant parm + Italian sausage pizza. Threw it into my hot pre-heated oven, low flame, for about 3 minutes. Topped with fresh arugula, olive oil, lemon zest + balsamic glaze. Lunch in minutes šš¼

Easy marinated olives to make at homeā¦
Good quality olive oil (I used @corto_olive ), red pepper flakes, fennel seeds, mustard seeds, fresh thyme + rosemary, orange + lemon peel, crushed garlic cloves, olives (with or without pits)
Add olive oil + aromatics to a pot and gently heat over medium-low heat for about 10 minutes.. you donāt want to cook the oil, you just want to warm it to help infuse all the other ingredients.
Put your olives in a jar and poor the warm olive oil mixture on top. Let sit at room temperature for about 2 hours. Store in the fringe, will last for about 2 weeks. Remove olives and let come to room temp before serving.
