Making a soufflé is terrifying 🫣 even for a Michelin-trained chef
But I’m so glad this chocolate soufflé turned out perfectly, so save this post and steal my recipe below:
Chocolate soufflé recipe for 10 people:
Chocolate base:
450ml whole milk
45g butter
45g flour
280g of chocolate
7 yolks
95g sugar
A teaspoon of vanilla extract
pinch of salt
tablespoon of Kahlúa
Meringue:
9 egg white
70g caster sugar
Heat the oven to 185 degrees, and cook for 30 mins.

The only dish I want to eat in 40c heat! Today Fatma, Hussein & I are making cold Sichuan noodles. Save this recipe for when the weather gets warmer ☀️
First we make the sauce. It’s very easy to scale (here we used large and small Chinese measuring spoons, you can use whatever you have at home)
Ingredients:
1 tbsp chopped spring onion
1 tbsp chili powder
1 tbsp white pepper
2 tbsp chopped garlic
2tbsp white sesame
2 tbsp chopped fresh coriander
1 tsp honey
Salt to taste
1 x packet chopped Chinese pickled cabbage (my favourite)

Put all the above into a heatproof bowl

Heat 2 tbsp vegetable oil & soy sauce in a pan until super hot then pour over all the ingredients until it sizzles and brings all the flavours together.

We also made some fresh egg noodles
250g of flour
3 yolks
1 egg
Mix together,
Work until smooth then put it though the machine at least 3 times to make it strong.

Cook the noodles in boiling salted water then mixed them together with the sauce and some of the water. Let all the flavours come together as it cools.

I’m in my last couple of weeks @therivercafelondon
There are too many people to thank but I’d like to particularly mention @ruthierogers , @josephtrivelli and @sianrc . What delicious food I’ve learnt to cook at such an incredible institution. I wouldn’t say it’s been easy but it’s 100% worth it.
And, to all my wonderful friends; what fun we’ve had while cooking up a storm. ❤️
Aside from my brief two year, brutal sabbatical, starting a restaurant in Margate, I’ve been at The River Cafe for the last 8 years. The ethos of celebrating the best in season done simply; is one of the many things I take away.
Bring on the next week or so, cooking and having fun. Had a particularly nice time last weekend as shown above.
