Time to introduce you to the best cookie in existence.
Recipe
12oz bread flour
1 teaspoon baking soda
1 teaspoon salt
8oz browned butter
2oz white sugar
8oz brown sugar
1 large egg
1 large egg yolk
1/8 cup milk
1 teaspoon vanilla extract
12oz chocolate chips
1.5 cups cornflakes
Step one: Grab your fanciest food processor—aka the one that hasn’t been collecting dust since your last attempt at homemade hummus. Dump in the bread flour, baking soda, and salt. Give it a whirl like you’re auditioning for a cooking show.
Now, dramatically toss it onto some parchment paper like a true kitchen rebel. Set it aside with confidence.
Next up: Brown butter (yes, we’re fancy like that) and sugars go into the mixer. Beat them together like they owe you money. One egg at a time—no jumping ahead! Add milk and vanilla until it looks like something between a science experiment and a masterpiece.
Now, it’s time for the flour mixture. Sprinkle it in like you’re adding magic dust. Toss in chocolate chips and… wait for it… the secret ingredient. (No, I won’t tell you what it is. That’s why it’s a secret.) ok, it’s Cornflakes.
Let the dough chill in the fridge for at least 2 hours—because cookies deserve a little self-care too. Then, bake at 375°F for 10-15 minutes. Once golden and glorious, sprinkle on some flaked salt like you’re a cookie wizard.

1/2 teaspoon salt

3 tablespoons olive oil
1 lemon, juiced
2 poached eggs

Toast

Honored. That’s the first word that came to mind when I was asked to reflect on my time at the James Beard Bootcamp for Policy Advocacy and Change. I felt so honored being chosen by an organization that could have picked any other chef to come together with 19 other chefs from across the country and collaborate on ideas and food.
To all the chefs I met and became friends with, I am glad we took the time to come together and get to know one another. I have no doubt we will see each other soon!
