Another big shoutout to @nextdoor.79 and @chef_macbeth for rolling in, firing up the bbq and delivering a night that went way too hard, in the best way.
I’m a man of few words but I feel like a lengthy post is necessary for this one…
Last Thursday night I had a fortuitous opportunity to represent nextdoor and work along side a chef, and good friend Lorenzo depetiz at Mosto wine bar in Canggu.
I met lorenzo a few years back on my first visit to Canggu. Lorenzo and I have never worked together before and neither of us knew how this would work but with a similar way of thinking and with our shared love for hospitality and both being bat shit crazy, we pulled off a truly memorable evening. Fully booked with most dishes selling out fucking quick
We kept the menu tighter than a nuns….bun?
but each dish was created with the intention of highlighting the quality produce
Using morotsu bay oysters it only seemed right to tie in Japanese flavours that compliment both venues POD
- morotsu bay oyster w smoked tomato granita and tomato shoyu
The chicken wing has been a staple on both our menus so it only seemed right to bring it back for a night
- Stuffed chicken wings w maacadamia sauce, sambal acar and fried kemangi leaves
The lasagnetta draws on Italian and middle eastern flavours that reflect Lorenzo’s and my own background (that being Egyptian)
- goat ragu lasagnetta w baharat spice and halloumi cream
And for the mains…. Well considering it was cape grim rib it only seemed right to do a take on a baliniese chimmichurri
- 750gm cape grim rib w charred Balinese chimmichurri
The show stopper however, Kinross lamb rack, we kept it true to nextdoor with a few slight tweaks to give a nod to the Balinese flavours.
- Zaatar glazed lamb rack w smoked tomato and kemangi
For those in attendance, we hope you had a beautiful evening, we most certainly did. For those that didn’t attend, keep your eyes peeled for the next one and do not sleep on it.
This has been a bit of a pinch yourself moment, an international collaboration has been high on the agenda for quite sometime and it’s great to see the networking pay off.
A massive thanks to Gavin Olsen for believing in me and the vision for Nextdoor. An even bigger thanks to laurie, sam, dan and the rest of the team for holding down the kitchen.
