The highly contested West African dish.... JOLLOF RICE. Which country makes the best? Where did it originate?
All I know is my mother and grandmother makes the best. I've taken both those recipes and created a version of my own which I'll be preparing for the @si_paradiso takeover next week. West African cuisine is full of flavours and complexity which I'm excited to be sharing with you all.

@chef_bcole_ of @hearthperth joins us for a special one-day takeover, bringing a different side of his cooking to the Cantina ~ more relaxed, more personal, and made to be shared.
The menu draws from his West African heritage ~ bold spice, fire-led cooking and layered flavour, all grounded in WA produce.
From 12pm, through to a courtyard close with @_aslan spinning Afro disco as the sun dips.

Twenty Seats Residency is back for round 2...
I'm super excited to be bringing this concept back to the Perth dining scene once again.
Taking over the 20 Seats restaurant for a 10 course West African fine dining feast.
Bookings through DM. Date preference and number of guests. Times will be allocated accordingly to ensure smooth operation. Can't wait to share with you all. Going to be a new menu so if you've already attended there's new dishes to try.

At Hearth Restaurant, that connection is front and centre. Set inside The Ritz-Carlton, Perth, Hearth is known for its focus on ingredients and for celebrating Western Australia’s producers through open-fire cooking and a menu shaped by season, place, and provenance. Chef de Cuisine, @chef_bcole_ has created a dish that lets Pardoo Wagyu do what it does best — bring depth, texture, and quiet confidence to the plate, while still giving the uniqueness of his dish room to speak.
Pardoo is a Wagyu that responds to technique, to intention. When it’s handled with precision, pushed a little further, the marbling carries flavour through every layer, delivering that balance of richness and clean finish Pardoo is known for.
What’s clear in this collaboration is how naturally Pardoo Wagyu fits belongs to a menu designed like this. Not as the whole story, but as a key part of it, working in concert with other elements, elevating the dish without overpowering it. That kind of flexibility matters in an intentional kitchen. And when the flavour and texture shows up consistently, it earns its place.
We’re proud to say that Pardoo Wagyu has been on the menu at Hearth for three years now. Chef Cole knows how to keep the menu intriguing with cuts like oyster blade and tomahawk, staying true to his ideal of educating guests on ingredients.

Throwback..... Vegetable Wellington
Braised leeks, purple and orange carrots, Zucchini wrapped in nori, mushroom duxelle and butter puff pastry. Served with leeks and champagne buerre blanc, caramelised fennel puree and red back ginger.
1.2kg Goldband snapper cooked over coals. Made for sharing. Served with brown butter, smoked mussels, capers and dill sauce. Lemon juice and zest for some freshness. Part of @hearthperth sharing dishes.
