This is the first international roaster (outside of EU) that we have carried at Chapter One.
If you aren’t familiar with Sey, they focus on incredibly clean coffees and roast as light as possible without getting green or cereal flavors.
They source around 300 micro lots per year, and do a lot at the farm level with lot separation which is also really unique.
Long story short their coffee is special and delicious 😉

Brewing this washed Pacamara from 'Los Pirineos', produced by Diego Baraona and roasted by @timwendelboe . The result is a remarkably clean cup with notes of tart red berries, stone fruit, and a structured acidity.
While the 1Zpresso ZP6 is the one in the frame, I actually achieved a slightly fuller and sweeter cup earlier using the Comandante C40 — it is all about finding the right balance for these beans.
