CHAM is a name with many meanings in Vietnamese, and we’ve embraced the ones that reflect who we are.
It can mean "to dip": like chấm-ing into a rich, flavorful sauce. In Vietnamese cuisine, dipping sauce isn’t just on the side, it brings everything together. It’s a small act, full of care and intention.
At its heart, CHAM is a space rooted in heritage and built for the community.

CHAM is a name with many meanings in Vietnamese, and we’ve embraced the ones that reflect who we are.
It can mean "indigo": a deep, natural dye that ages beautifully, to the values of patience, craft, and care; CHAM speaks to both tradition and intention.
We’re deeply grateful to our friend who gifted us this meaningful name.

It can mean "slow": not in a hurry, not rushed. Like waiting for a coffee to drip, or taking time to share a meal. Slowness is a strength, and intention is everything.
At its heart, CHAM is a space rooted in heritage and built for the community.

I turn down 90% of the invites I get for free food just because I don’t really care for the business and it feels like they just wanna quick viral hit.
But when Tony invited me to come to @cham_melbourne it was completely different - he just wanted to hang and offered food with no strings attached.
We got chatting and I soon found out that it was way more than just a cute cafe - each detail has been painfully through and has layers of meaning (just like the name cham).
I got the matcha cloud and salted foam coffee - both delicious and not too sweet. Crispy prawn summer roll was such a clever take on a classic, could’ve had 10 of these. I also see why the banh mi chau is a bestseller - you get to mix & match every bite (tiny bit too sweet for me but super satisfying). [invite]

Looking inward (and outward), GIVE and TAKE presents a series of objects that investigate the exchanges that take place within our shared environment.
A gentle reflection on reciprocity with nature.

Phở gà
inspired by northern style and built from a slow and layered process. We start with a clear chicken stock from bones, neck, and wings. Then strain and simmer again with vegetables and spices, finishing with our master stock for depth. Each bowl is seasoned only with premium anchovy fish sauce, finished with ginger galangal oil and lime juice before it reaches your table, ensuring it’s at its best.
Served with Chinese donut to dip, sriracha, house-made pickled garlic, and lime so you can season to your liking. It's not your typical phở gà, but we’d love for you to give it a try 💙
