On May 21st, we invite you to join us for a rare convergence of three of Asia’s deeply rooted kitchens as they explore this age old tradition. Join us for an 11 course tasting collaboration where we bridge the landscapes of India, Indonesia, and Thailand through the banana leaf.
_ NAAR_ (India): Prateek Sadhu brings the soul of the Himalayan hills, showcasing the rustic and refined techniques of the Indian subcontinent.
_LOCAVORE NXT_ (Indonesia): Ray Adriansyah and Eelke Plasmeijer, who pioneered the exclusive use of Indonesian ingredients in their ever-evolving practices, explore the role of banana leaf as used in Indonesian cooking.
_WANA YOOK_ (Thailand): Wana Yook explores the leaf’s essential role in Thai tradition, from the delicate art of folding and aromatic steaming, to using charred husks for depth and smoke.
