Tenía rato de no postear aquí, pero me encontré con este Geisha Natural de Pedro Vázquez @cafeologia.lafinca y merecía video. Súper aromático, sedoso, a mi me dio notas a mango, con bastante dulzor pero también algo de acidez brillante y controlada. Lo hice en Origami con filtro cónico, 15g, 250g de agua a 90°.

Mi café favorito de enero fue este Pink Bourbon lavado de Colombia de @lacabracoffee lo hice en aeropress, en v60 y en origami y esta fue la receta que más me funcionó.
15g, molienda media-gruesa, 250g de agua a 89°C (aquí hierve a 93°C entonces ~96% del punto de ebullición)
50g de bloom / 50g segundo vertido / 150g tercer y último vertido. Todo en un tiempo aproximado de 2.5 - 3 min.
La intención es generar poca agitación para no aumentar el tiempo de extracción y resaltar las notas dulces y frutales de este grano.

I tracked all the different bags of coffee I brewed this year. A mix of new roasters and old favorites.
Along the way, I discovered new flavors and profiles — and more importantly, I got clearer about my own taste. No surprise there: Gesha and Caturra varieties stood out, with Washed and Natural becoming my go-to processes.
It was a really good coffee year, hope you enjoyed your brews too.
Drink with intention, stay curious, explore new flavor, regions, and roasters. And remember to move away from commodity coffee that exploits the people who grow it.
