Why Cedar’s Coppice? We love this question.
A “coppice” is where trees are cut back to the ground so they grow back stronger. Shelby chose it as a metaphor for this place, somewhere you come to shed the weight of everyday life and walk out renewed.
Cedar trees run deep in her story. She climbed them as a girl, shared a love of them with her late father, and carried “Cedar” as her nickname at RYLA camp for over a decade. This name is a love letter to nature, to Bastrop, and to her dad.
After years of saving to make this dream real, it was a village of friends and family who helped bring it to life, moving furniture, painting walls, showing up with their hands and their hearts. Her fiance built the bar himself. Every corner of this place carries the fingerprints of people who love her, and we think you feel that the moment you walk in.
Inside you will find fresh baked pies and cakes (arguably the best in town), cold beer, wine, coffee and tea, all served on true vintage plates. Books by local authors, handmade goods from incredible local vendors, and greenhouse plants grown on Shelby and her fiance’s own homestead.
A local artist painted our beautiful mural. Our little patio is your escape from the world. And the whole place is very photo worthy.

Cedar’s very first celebrity walked into our shop yesterday and bought a lemonade, and we totally blew it.
Adrian Grenier. The guy from Devil Wears Prada. In our little shop. Ordering a lemonade like a normal person.
Being us, we went up and said, I am sure you get this all the time but you look just like the boyfriend from Devil Wears Prada. And without missing a beat, he goes, It’s cause I am.
And we lost it. Completely lost it. Did we get a photo? No. Did we even think about starting a celebrity wall in that moment? Absolutely not. We just stood there like two people who have never seen a famous person in their entire lives.
So instead of a photo, please enjoy this little lizard we found on the patio, who handled the whole situation way better than we did.
First celebrity. Zero pictures. Infinite regrets. Cedar’s is officially on the map, though, and we are choosing to focus on that.
