CCAP Director of Alumni Relations and chef of 15 years. Angie Marin, recently prepared a delicious spring menu with culinary students at Long Island City High School. The menu featured Spring Vegetable Risotto and a Strawberry Rhubarb Compote served over strawberry ice cream.
Students worked alongside Chef Angie to prepare the risotto using fresh seasonal vegetables including spring onions, oyster mushrooms, asparagus, and peas. To finish the meal, students topped strawberry ice cream with a sweet and tangy strawberry rhubarb compote.
