As we look ahead, we’re working toward a fully sustainable kitchen, where every ‘waste’ ingredient has a purpose. We’re also growing our own herbs, flowers, and potatoes on our rooftop year-round, so more and more of what you see on the table is grown right here at home.

Most people have never heard of macambo and Chef Carlos Delgado (@chefcarlosdelgg ) wants to change that. At Causa (@causadc_ ) in Washington, D.C., he has built a dessert program around Theobroma bicolor, a wild relative of cacao grown in the Amazonian lowlands. Lightly roasted and refined in-house, the beans yield something that resembles a natural, earthy white chocolate. Delgado sources them from a women’s co-op near Tarapoto, using the ingredient to introduce diners to a product from Peru’s rainforest that few outside the region know.
