Every January we're bombarded with advice about what to eat, what to eat less of.
But food decisions don’t happen in a vacuum. They shape land, livelihoods, ecosystems, and communities in ways we don’t see at the grocery store.
Eaters take multiple paths in search of better health and a healthier planet. And we keep coming back this: How food is produced matters. Who we support matters. And small, everyday choices add up over time.
It isn’t about doing everything the same way or making perfect choices. It’s about staying curious, asking better questions, and paying attention to the systems we’re part of. We’re all learning as we go.
Which farmers are you excited to support this year?
This is what winter looks like at the ranch.
These months are what we call our “dormant season”. Grass growth slows to a halt, days are shorter, and the land asks us to shift how we care for both the soil and our animals.
Even though the grass isn’t growing, our cattle are still an important part of the system this time of year. With limited fresh forage available, we rely on locally grown hay to meet their nutritional needs.
Hay isn’t just feed; it’s how we bridge the gap when grass quality dips due to cold temperatures and slower growth. It’s also a source of nutrients for the soil — the cattle eat what they need, and what they leave behind eventually feeds the soil microbes.
Winter is also a season of learning. We experiment, observe, and refine—looking for ways to reduce wintering costs, improve efficiency, and keep more carbon cycling back into the soil. Every decision is made with long-term soil health in mind.
As temperatures drop, our pasture-raised hogs transition back into the barn. This keeps them protected from the elements while still allowing them to express natural behaviors and remain part of our regenerative system.
The winter season may look quieter, but the work doesn’t stop. It’s a time of stewardship, preparation, and care—setting the foundation for the growing season ahead.
Ground beef = endless easy meals
Our grass-fed, grass-finished ground beef is a true staple. It's also high quality! Pasture raised, supporting soil restoration.
Nutrient-dense, deeply flavorful, and incredibly versatile 🍝🍔🌮 It’s the kind of beef you can rely on for everyday meals without sacrificing quality.
From tacos and burgers to chili and slow-simmered bolognese, ground beef makes it easy to put nourishing, satisfying meals on the table all week long.
When you source from Carman Ranch, you’re also supporting regenerative grazing practices that restore the soil and land for future generations. Healthy soil grows healthy grass, feeds healthy animals, and ultimately nourishes us with healthier food.
As we head into the New Year, now is the time to stock your freezer with food you feel good about eating. Our ground beef bundle makes it easy to commit to healthier, home-cooked meals while supporting regenerative agriculture with every purchase.

This season I’m grateful for kids home from faraway places, moisture in the ground, and healthy animals.
I’m thankful for new faces and energy on the ranch, and for the people who make our work possible. Thank you for being part of our community.
May this season bring you joy, rest, reflection, nourishing food, and an excuse to do what makes you happy… like dragging your kids outside for a family photo.
(thank you @josie.marie.photo for swinging by!)
Moving cattle is the expression of two of the very best parts of ranching: the impact the cattle have on the land, and the relationship we build with them.
The impact on the land mimics the migratory grazing patterns of the large herds of herbivores that were here when these grass species evolved 🦬
When we do it well, the grasslands are more vibrant and productive and diverse. The key is to create impact with the cattle, followed by rest. We often rest our pastures for an entire year after grazing 🌾
The relationship comes through building trust.
A technique called pressure and release is the most effective way to do this, and we do our best to follow in the footsteps of many great stockmen and women.
The technique is simple.
Our presence makes them a little bit uncomfortable.
They’re sensitive to someone stepping into their flight zone, and they’ll move away from that pressure.
And that’s the point — to move them from one pasture to the next by creating just enough discomfort that they choose to take a step.
The trick is to ask for one step in the right direction, then back off.
Once they’ve taken two or three steps, you let it be their idea. If they stop, you step toward them again until they shift. As long as they’re moving the right way, you stay quiet and give them space.
That release is the reward and that’s how animals learn you’re offering guidance, not force.
And as is so often the case when working with animals, it applies to humans too!
These are our pasture-raised, (SOY-FREE) heritage breed pigs!
Most meat animals (even the regenerative kind) require some kind of supplemental feed during the seasons when they don’t have as much access to fresh pasture. Pigs, being monogastric, meaning they can’t break down the cellulose in grass because they don’t have rumen, always require supplemental feed.
The industry recommends soybean supplementation and feed, but it’s never felt right to us.
We’re grateful to have found a local source for alfalfa that provides our pigs with the nutrients they need to thrive here in the mountains of Oregon.
Our pigs are so important to our holistic ranching ecosystem — they are integral in preparing our pastures for replanting and restoring with their natural rooting activity. They’ve even helped us break apart invasive grasses and add fertility back into the soil! 🐖🌾
We’ve been working on a special seasonal box for you and it’s officially live…

Hi, it’s Cory. I’m the fourth-generation rancher behind Carman Ranch.
Some of you have been with us for years.
Some of you are customers, neighbors, ranchers, or farmers. Some of you just wandered in.
I wanted to reintroduce myself, our ranch, and what we’re here to do.
Carman Ranch sits in the Wallowa Valley in northeast Oregon. My great-grandfather came to this valley in 1913 and started raising cattle here. The generations since all share a love for this place. I get to learn from their mistakes, and from my own.
I left for a while to study environmental policy and work in D.C., but eventually realized the most meaningful impact I could make was by taking care of land. Over time, I learned that, managed well, cattle could actually improve the health of the land.
I raise my kids here, so I get to look at soil tests, spreadsheets and teenager Snapchat messages in the same afternoon.
We’re continually evolving, but here’s a bit about what we’re up to:
We produce 100% grass-fed beef. (And a few pastured pigs too!) We use regenerative grazing practices to raise our animals, which means we can give back to the land, give our animals a content and thriving life, and grow exceptionally healthy and delicious beef.
We also have incredible partner producers, so we can serve more people in the Pacific Northwest region and offer more than just beef (like chicken options!)
We use the whole animal, so we sell all parts of the cow (not just steaks), and we try to make your life easier by creating convenient cuts like shaved steak and hot dogs and portable snacks like our clean beef sticks and jerky.
We sell bulk beef because it's the best value.
We stay regional on purpose. We call the PNW our home, and serve the Portland and Seattle area with local delivery and pick-up options.
Whether you’ve been supporting us here for years or just recently found us, we’re so grateful you’re here. We’re excited to be your go-to high-quality meat source here in the PNW and look forward to sharing our plans and progress with you.
Drop a comment👇🏼 and tell me where you’re tuning in from – I’d love to hear.
