In my opinion , the don of all soups !
Here’s what you’ll need
Feeds 6-8 people
1.5 cups brown lentils
1/2 of the silverbeet bunch
3 large white potatoes cubed
4 gloves garlic crushed
1 large brown onion diced
50 g butter
1 single bunch fresh coriander ( chopped )
1. 5 cup fresh lemon juice
As much water as needed .
Salt to your own taste
SOAK lentils for minimum one hour prior to starting .
Wash silverbeet spinach well and chop finely (leaving out the white stems ).
Bring lentils to a boil , add cubed potatoes and silverbeet .
Add enough water to cover spinach so it cooks through (keep in mind the spinach will omit a little water ).
Salt to taste
In a pan fry butter cook off garlic and coriander for a minute then add to the soup .
Fry off the onion with some more butter and add it to the soup .
Let it simmer until the lentils and potatoes are cooked . Half cover .
Adding water as you need to as you go .
Finish off with the lemon juice .

To make the potatoes I used @spud.lite baby potatoes (any potato will do) and placed them in the air fryer for 30 min at 200 °C until they were nice and crispy 🤤 Seasoned with EVOO, rosemary, thyme and garlic powder. You could cook these in the oven as well!
Fresh & Vibrant Potato Salad | Recipe Below;
ING
½kg baby potatoes, cut into quarters and boiled till fork tender. You can use more potatoes if you like.
1 red & green capsicum, thinly sliced
Jar pitted Kalamata olives, drained
Mixed leaf lettuce
½ red onion, thinly sliced
Lebanese cucumber, diced
Handful thinly sliced red cabbage
Bunch of parsley, chopped
Spring onion, chopped
Fresh mint, chopped
1 large clove garlic, crushed
½ teaspoon Dried mint
1 lemon, juiced
Olive oil to coat
Salt and pepper to taste.
Combine the above ingredients and serve immediately.
YOU CAN MAKE THIS IN ADVANCE BUT DO NOT ADD THE MIXED LEAF LETTUCE TII YOU ARE JUST ABOUT TO SERVE OTHERWISE IT WILL GO SOGGY.

When we’re looking to get more food volume, which many of us look to when we’re in a diet phase, we usually look to those fun-filled carbs and make the sacrificial cut. 🥺
BUT, the good news is, you don’t have to deprive yourself. For example, a simple switch to a lower GI potato allows you to continue enjoying that side of chips. 🥳
There’s certainly a convenience differentiation here, but hopefully you’ll agree a few extra minutes to cut up potatoes into your desired shape is well worth it when looking at ways to get more volume and meet your nutrition goals.

POTATO AND KIMCHI BURGERS

Ooh it’s a bit weird on the train this morning, thanks to lockdown there is barely anyone onboard - nice to get a seat for once!! Anyway, here is a little throwback to these yummy burgers!
The recipe is:
850g @carisma_potatoes
Olive oil
1 clove of garlic
1/4 cup celery
1 can butter beans
1/2 cup packed kimchi
1 tsp salt
1/2 tsp pepper
2/3 cup wholemeal plain flour
•
1. Heat oven 170 degrees celsius
2. Remove potatoes from packet and make a small cut along the centre and bake for 45 minutes or until easily cut with a knife. Let them sit until they are cool enough to handle and roughly peel the skin off
3. In a small pan heat some olive oil and then add 1 minced clove of garlic and 1/4 cup of diced celery, cook on low for approx. 5 minutes
4. Then in a blender combine the potatoes and butter beans
5. Then add the celery, garlic and kimchi. Blend until well combined but still a few chunks for texture.
6. Stir through the flour
7. Dust your hands with some extra flour and then form into patty shapes
8. Cook for 21 min on one side, flip with a knife and then cook for 13 min
9. Serve with burger buns and fillings of choice

Potato croquettes are always a good idea! These ones are made with @carisma_potatoes which are 25% lower in carbs but 100% delicious!
