@chan_can_eat and I thought it would be a great idea to get together for a naughty spring roll cook off. Two different rolls, two completely different flavours, but two delicious out comes.
@chan_can_eat Came up with a KFC style popcorn chicken, with potato and gravy, sliced cheese and dipped in the OG KFC gravy✌️
Mine was a Birria Style - Smoked Pulled beef with mozzarella cheese, then dipped in the consommé along with coriander and chopped onion🤟

𝘾𝙤𝙬𝙗𝙤𝙮 𝘾𝙝𝙞𝙘𝙠𝙚𝙣 𝙎𝙖𝙡𝙖𝙙
Basically an open burrito, or bang it in a tortilla and call it a burrito, you do you🤟
Ingredients:
Chipotle Dressing -
1 tin chipotle in adobo sauce
1 clove of garlic
1 cup plain yoghurt
1/2 cup Mayo
1 lime, juiced
1 bunch coriander
1 tsp ground cumin
Salt & pepper
1 Tbsp Olive oil
Chicken -
6-8 boneless thighs
2 tsp ground cumin
2 tsp ground coriander
2 tsp smoked paprika
2 tsp dried parsley
Salt & pepper
Olive oil
Everything else -
2 cos lettuce, Chopped
3 sweetcorn, Charred and chopped
1 red onion, Chopped
300g Cherry Tom’s, Chopped
2 Avocados, Diced
Method:
• Start with the chipotle dressing, add everything to a blender and whiz until smooth. Sweet ask de in the fridge until needed.
• Now the veg, chop and slice everything thing up roughly and add to a serving dish, char the corn on the bbq then remove the kernels and add with the other veg.
• Season the chicken then massage the flavours, grill on a hot bbq until cooked through through and hitting an internal of 165F, then roughly chop and add to the veg, drizzle with the chipotle mayo, and enjoy🤟
