Wrapped up my Sunday ride in UP Diliman with breakfast at Cappo Coffee. It’s my second time here, and I love the vibe—plus, they’ve got a bike rack for cyclists to relax after a ride. Behind The Brew Bar – Women Coffee Roasters! Meet Inza (@inzavita ), owner and roaster of @cappocoffee . I met Inza at their ancestral home in Sta. Ana, Manila. It was interesting to learn that her journey into coffee roasting began after an accident—an unexpected moment that eventually led her to discover a new passion. Fast forward to today, that passion has grown into a brand now known as Cappo Coffee. Their café in QC initially housed their roasting machine, but as the business grew, they were able to get a dedicated roasting space right beside the shop—giving Cappo Coffee its own home for roasting. I had the chance to watch Inza roast, and while many systems today rely heavily on automation, she still prefers a more hands-on approach. Carefully watching the time, manually adjusting the settings when needed, checking the color of the beans, and smelling the fragrance as the roast develops—it’s a process that requires focus, intuition, and experience. Seeing Inza go through the entire roasting process—from weighing the green beans, loading them into the roaster, monitoring every stage, and finally storing the freshly roasted beans—reminds you that roasting is not just a craft but also physically demanding work.
