It's not that I can't make akara, I just don't feel the need to make it at home, I'd rather just buy it outside 😁

INGREDIENTS
Akara
Minced meat (I used plant based crumbles, you can use any protein you like)
Diced onions
Salt and pepper to taste
Spring onions for garnish
Sourdough okpa bread

My one goal after buying fresh corn from the farmers market was remixing this @1qfoodplatter Ekoki video. Only to finish shooting and realise remix’ isn’t turned on 😭
Anyhoo, I’m sharing it anyway cause it bangs and I made the Ekoki plant based as usual. Replaced the crayfish and fish with cumin and mushrooms
Used mushroom stock instead of water, the banana leaves from my neighbour's compound did the work and they steamed to perfection in @radiancecookware cast iron dutch oven

This Christmas, I made a small batch of Traditional Aged Fruitcake 🎄
Made slowly with soaked fruits, real butter, and warm spices, then left to rest and mature. During aging, each cake is gently fed with rum, allowing the flavours to deepen, soften, and come together beautifully.
It’s rich, moist, and intentionally made, the kind of cake meant for quiet moments, slow bites, and a well-set table.
