[TODO FINAL ES TAMBIÉN UN COMIENZO] 60 ml @condesagin Sahumerio 30 ml Jerez fino infusionado con cempasúchil marchito 1 barspoon óleo de mandarina 2 dash bitter de naranja 1 dash solución salina al 20% Método: refrescado en vaso mezclador Cristalería: Copa Nick & Nora Garnitura: Polvo de cempasúchil y mandarina Subrecetas: Jerez fino infusionado con cempasúchil marchito 200 ml Jerez fino 4 gr pétalo de cempasúchil marchito Infusionar jerez con 2 gr de cempasúchil por 20 minutos a 45 C en sous vide. Colar y repetir proceso con los otros 2 gr restantes. Óleo de mandarina: 100 gr cáscara de mandarina 100 gr azúcar refinada Mezclar en un contenedor, reposar 8hr y filtrar.
