@miamiroyalcastle of today looks like a fast-food restaurant from the outside but feels more like a simple neighborhood diner inside. This place stays open 24/7 and has a basic breakfast menu, some sandwiches, and a T-bone steak, but what they’re famous for are the sliders. You can order them in “six-packs” with or without some pretty good crinkle-cut fries.

The “Shiddy Burger” (we’re ignoring the ironic name and suggest you do the same) from Big Kids in Logan Square is the platonic ideal of a smashburger. The griddled patties have lacy caramelized edges, and are smooshed on a flat top within an inch of their life. And despite that extreme smooshing, the meat still maintains plenty of juiciness.
We didn’t realize that there was no cheese on this burger until after we finished eating it. The smash patties are topped with marie rose sauce, and balsamic onion jam, and that’s it.
