A full-scale tastebuds takeover. @barbrutalbarcelona x Stamba Vol. 2 is a deep dive into an ingredient frenzy, minimal-intervention cooking experience led by none other than @edjwilson , @josephinestead and @williamgleave , the brains behind UK hospitality staples @brawn49 and @sargasso.bar . Working in true collaborative style with Stamba’s chefs, creating a cross-cultural kitchen collision, the teams have been intentionally sourcing, tasting, and building menus that bridge London, Margate, and Georgia. The friendship between Bar Brutal and Brawn goes way back, sharing line-ups of natural wine or music festivals since the early 2010s. The mutual respect based on honest and uninhibited hospitality runs deep, and it was only a matter of time before bringing them to Stamba for a match made in flavour heaven. Across two days, experience two very distinctive culinary experiences: a Georgian-style supra and an on-the-go punchy food festival. It’s taken us a moment to pull this one together!! We’ve been open 4.5 years now, and this has always been on the cards, finally ED & JOSIE ARE BRINGING BRAWN TO DAYLESFORD!! I’ll do my best to keep the introduction on Brawn brief(ish) because I could go on for hours, it has a very dear place in my heart (and that of many I understand). In a beautiful corner site on Columbia Rd, Hackney lies one of the world’s great wine bistros @brawn49 . It’s been there 15 years with Chef Patron @edjwilson writing & cooking spectacular weekly menus that reflect not only the season but what’s in the glass as well, and every ingredient and recipe is meticulously sourced and understood, it’s pure joy, but with deep deep understanding and reverence. I worked there in 2015 & 2016 and it changed everything for me. A huge influence on what we do here at Merenda, and countless others around the world as well. Brawn is the real deal, and many wine and food lovers make it their first and last stop when visiting London. On Monday 30th March we’ve got Ed in the kitchen and Josie in the front of house with the entire Merenda team to present a menu of bonafide @brawn49 classics! We’ve had some great conversations over the last few weeks about the beautiful late summer produce available here from our small growers, farmers and of course the wonderful seafood we have here, and Ed is excited to get stuck in with the Merenda team in the kitchen, think Brawn’s famous terrine, esquiexada, Ed’s beguiling Beurre Blanc and there’s talk of Cassoulet!! We are putting together a magnificent list of wines to suit the kind of bistro cooking that Brawn is famous for, think joyful, spirited wines from some of France & Italys most renowned small farmers & vignerons. Rustic, joyous things to drink with gusto! We are making the most of having our dear friends Ed & Joise here for one day only and rolling one long service, with the first bookings at 1pm and the last at 8pm, with bookings available for the Brawn menu across both the bar and the bistro. Itll be a loosely structured 3ish course menu with some special supplement dishes and the price is $140pp. Bookings via our website!!
