For the cake
⢠3 cups all purpose plain flour
⢠½ cup almond meal
⢠1 tsp baking powder
⢠1 tsp baking soda
⢠1 tsp salt
⢠1 cup almond milk
⢠½ cup freshly squeezed lemon juice
⢠Zest 3 lemons
⢠3 eggs
⢠1 tsp vanilla extract
⢠1 cup extra virgin olive oil
⢠1 cup honey
For the frosting
⢠200g crème fraîche
⢠¼ cup strained greek yoghurt
⢠¼ cup maple syrup
Cake decoration
⢠1 sliced lemon, pips removed
⢠Zest 1 lemon
⢠Zest 1 orange
⢠Powdered sugar for dusting (optional)

Seriously good sides: Part 2 š®āšØ Crispy curried cauliflower bites. Recipe below, continues in full on my website via link in bio!
Ingredients:
Serves 4 to 6 (as a side)
- 1 large head cauliflower, core/leaves removed and broken into florets
For the batter
- 1 cup plain flour
- 2 tbsp corn flour
- 1 tbsp curry powder
- Pinch salt
- 1 tsp garlic powder
- Around 1 cup soda water (adjust for consistency)
For the spiced panko crumb
- 3/4 cup panko crumbs
- 2 tsp turmeric
- 1 tsp garlic powder
- 2 tsp coriander
- Pinch salt
- Crack pepper
For the cauliflower sauce
- 1/2 cup greek yoghurt
- 2 tbsp crushed tomato
- 1 tbsp extra virgin olive oil
- Juice 1 lemon
- 2 tsp honey
- 2 tsp turmeric
- Generous crack pepper
- Pinch salt
- Splash water (for saucy consistency)
To serve
- 4-5 baby cucumbers, sliced thinly longways
- Sprinkle toasted cumin seeds (optional)
- 10g curry leaves, fried for 30 seconds in neutral oil e.g. peanut oil
- 1 lime, sliced into cheeks or wedges

For the G&T
- 30mls gin per glass
- Large handful ice
- 130mls tonic per glass
- 1 lemon peel
- 3 skewered green olives per glass
For the tomatoes
- 3 large tomatoes grated
- Drizzle extra virgin olive oil
- Pinch salt
- Zest 1 lemon
For the toast
- 1 halved slice sourdough baguette per person (varies per loaf/bread used); toasted over the stove in evoo
- 1 tbsp tomatoes per slice
- 4 tsp finely chopped chives (1 tsp per toast)
- 3-4 anchovies per toast
- Zest 1 lemon (Sprinkle per toast)
- Final drizzle olive oil

⢠10-12 medium potatoes of choice
⢠Generous drizzle olive oil

For the salad
⢠¼ cup gherkins, diced
⢠¼ cup cucumbers, diced
⢠2 tbsp finely chopped chives
⢠½ small red onion, diced
⢠1 tbsp dill, finely chopped
For the dressing
⢠¼ cup thick greek greek yoghurt
⢠2 tbsp mayonnaise (i used kewpie)
⢠1 tsp dijon mustard
⢠Juice of 1 lemon
