FIRE. Fire is a tool, a teacher, a builder and a destroyer. Ever present in nature, fire is there to tip the scale when things get out of balance. There’s something printed in our DNA to be drawn to it. I am obsessed with harnessing this elemental force to cook with, unlocking new levels of flavor, texture and aesthetic. It’s a transformation right before your eyes every time. Balance and transformation is what I keep coming back to. This technologically fueled world bogs me down sometimes. I get overwhelmed trying to make sense of it all and cooking with fire is something that always brings me back to earth. I had the good fortune of a successful sheep hunt in Hawaii with help from @keeganrice in December. Here’s one of many ways I’ve been enjoying the harvest. Sheep burgers! Start by slowly caramelizing some onions, when they’re done set em aside. Ball up handful sized burger balls. Hot castie, sizzle, season, smash While that’s going, toast your buns in plenty of olive oil & butter. Flip your patties, add your onions followed by your fave chz and cover. Went with sharp cheddar. Assemble.. bang some secret sauce on both sides of your bun( mine was ketchup, mayo, little soy sauce, chopped up dill pickles) build your burger & throw something green & crispy like arugula or shredded lettuce on top. It’s hard to beat a good wild game cheeseburger, enjoyyyy🫔

A few of my favorite memories from last winter amongst great friends, deep powder and the best of times! Exactly a year ago today I had a tube in my chest stuck in a hospital bed in Mexico. Man, how life can change in an instant! I’ve come a long way since.. from Japan to Alaska, Puerto Rico to Hawaii, insanely grateful for every adventure this past year and those I’ve gotten to share them with. Health, community, passions, I’m not taking a single shred of it for grantedšŸ™‡ā€ā™‚ļø Couldn’t be more excited for the winter ahead and I’m ready to pounce as soon as the ol man shows upšŸš€ @libtechski @anonoptics @flylowgear @casttouring

Mm the sweet spring bloom of morel mushrooms and fresh nettle leaves. May not be the season but who cares, it’s always a good time to #shareaslice Here’s some loose guidelines if you wanna make it too! Wash and sautĆ© your mushrooms with chopped garlic, thyme, butter and a splash of white wine, let that reduce then some cream. Slap open a fresh @gozney Neapolitan dough ball, lay down some nettle leaves, morels & cream, a little parm and evoo. Cook about 3 min at 650F in the @gozney Arc. Finish off with some dollops of herb whipped goat cheese, sea salt more parm & evoo. Enjoy n give thanksšŸ¤™

Missin the snow shred even though summer is really epic!.. Here’s my first line of the trip in Alaska this April and it was one to remember for a long time. I dropped in off the ridge and followed the spine panel. We had gotten a quick refresh and knew the snow would be reactive but made the decision that it was manageable with clean exits.. As anticipated a small pocket ripped out about 6 inches deep. It shed right and I went left staying on high ground. Ultimately felt solid about the line choice and how I rode it. Skiing in Alaska is incredibly humbling and I’m eager to keep learning. Glad this one worked out and grateful for all the good days inna di mountains! šŸššŸŽ„ @mistasweesh
