After almost ten years, we decided it was time to update our permanent range of kitchen knives. The Forge Collection takes the best bits from our Classic and Stainless ranges and combines them in one new line, shaped by the same principles that have guided our work from the beginning. Since the first batch in 2019, Jimmy has continued to refine the Mini Deba design. This year’s batch is extra fishy, with a forged flute detail inspired by a mackerel fin. As always, these little fellas are forged with a thick spine for strength, then carefully ground and stone finished to an extremely fine edge - perfect for working around and through small fish bones. Available on Tuesday 5th of May.

The baby Debas in for heat treatment. Heated and rapidly quenched in oil, the core steel is hardened to take a fine edge and hold it well.

Jimmy’s upcoming Debas feature an unusual fluted detail, embossed into the blade surface using specially made tooling under our biggest power hammer. Here he’s grinding off the waste material - known as the flash - and refining the final profile.

Jimmy and Ralph roughing out the handles for the upcoming mini Debas. For these, they’ve kept things simple - a one piece tapered octagonal handle in Smithies Mystery Wood, an incredibly hard tropical timber that our next door neighbour found floating down a local waterway.
