Though it’s in my job description as a baker, I won’t sugar coat the following announcement. Black Jet Baking Co. is facing some tough challenges and we’ve updated our hours.
It is a TOUGH spot to be in when you are the harbinger of fun, delicious and light when things are not as they seem. 2025 has been brutal, for everyone. The realities of operating a food business have reached an unsustainable point and we need to make some hard choices. Our operating costs have never been higher and it seems each day a new situation, setback or broken piece of equipment comes hurtling towards us.
You may have noticed in recent weeks some favorite menu items missing from the case, or you may miss Pizza Night. We do too, but for now we’re making some necessary changes to our menu and hours of operation.
In recent months, many of my closest and dearest, who have been at it as long or longer than me, have closed up shop. This is a grueling and unforgiving life sometimes and then on a dime it can be the most fun and the most rewarding. I am so grateful to my team for their resilience and commitment.
So here comes some GOOD and not so GOOD news. When we launched the bakery in 2017, we opened at 7AM and closed at 3PM. We are going back to that! Opening a full hour EARLIER! We were also open WEDNESDAY through SUNDAY. We are going back to that too. Starting NEXT WEEK, we will be closed on TUESDAYS.
As much as we will miss your faces on Tuesdays, we will be EVEN more excited to see them Wednesday through Sunday when you come and support our beautiful bakery on the corner.
We are so grateful for your continued love and support, we need it more than ever!. Thank you in advance for your understanding as we make these necessary adjustments. New hours to begin NEXT WEEK, October 15.

i get asked quite a bit,
"what's your favorite thing to bake?"
Typically, that comes after I am asked what time I wake up.
I switch up my answer based on my mood, but if i'm honest, i think it's cookies?! i really love a good cookie and have suffered through some bad ones and still had a great time.
i'm currently underway the tedious process of a new cookie that's giving me some TROUBLE, so in the meantime, I'm going to appreciate this one.

i love taking time when in my mum's house to stand in her bedroom, or closet, or work room and surround myself with her fabrics, clothes or notes and see how she makes the most beautiful things out of scraps. how she saves memories and pairs them with others and makes a perfect collage in her windows.
I love sitting on the floor of her kitchen while she whips up an epic breakfast, or her legendary spaghetti and meatballs while listening to music REALLY loud.
jen and i are the luckiest. she's 1 of 1 and im so grateful she is ours.
