been so long!!!!! med school has kept me busy busy busy but I wanted to start posting again, so I’m back with this vegetarian chili recipe! let’s talk TOFU!! —>sharing my new favorite crispy tofu recipe!! this way of making tofu has been my go-to recently because it’s SO easy and improves the texture and crispiness of the tofu!! love adding these in salads, bowls, wraps, tacos, sandwiches, stir fries (& list goes on…..) 1) i like to open my extra firm tofu pack and cut it into sections for each serving, and then throw them in the freezer. when I’m ready to use it, I take it out, thaw it in the microwave, squeeze the water out, and it’s ready to use! the best part of this method is that freezing and then thawing the tofu completely changes the texture! it’s becomes more like a sponge and absorbs the marinades way better = more flavorful tofu! (also acts as a great fake meat if that’s your vibe!!) 2) cut into cubes, add to any marinade you like. the one here is a spicy Thai red curry tamarind one (see previous post for that sauce) but here are some of my other favorites on rotation: -equal parts sriracha and honey for a sweet and spicy one - soy sauce, maple syrup, sriracha, and garlic powder (good for stir fries especially) - Greek yogurt, cumin, garam masala, turmeric, chili powder, garlic+ginger (great for grain bowls) 3) quick light spray of any cooking oil and air fry at 350 F for 10-12 mins. perfect. every. time. . . . #food #foodie #foodblogger #vegan #veganrecipes #veganfood #tofu #tofurecipes #salad #bowls #lunch #lunchideas #veganlunch #vegetarian #vegetarianrecipes #fakemeat #veganchicken #crispy #airfryer #airfryerrecipes

I’m baaaackk! Lot of things have changed since the last time I posted: changed jobs, moved back to California, learned selling a car registered in another state is hell, etc. Had to take a break my kitchen adventures for a while until life started to get back into a rhythm. Now that I’m back home though, that means more opportunities to collaborate with my sister @bitesofanempath 👀 (until she leaves us for med school 😭). We got bored this Saturday afternoon and decided to take our family’s obsession over Thai food and put it into a taco! •spicy veggie tortilla pizza w/ricotta and hot honey• HI!!!!! back after a MINUTE! there’s been a lot going on which required my undivided attention but I have still been finding time to make new things so here’s a little something I made yday!!! my favorite pizza in the whole world is RTP’s veggie gourmet (srsly it’s beyond phenomenal and it’s been our only order from them for the last two decades). BUT ofc I can’t just order it whenever I want so when I’m craving a pizza vibe I make this instead! Nothing like RTP but it’s just to satisfy the pizza craving and it’s done in less than 10 mins AND it’s healthy!!!!! I took a low carb tortilla and took 2 tbsp of any tomato basil sauce and spread it super thinly (don’t want it to be soggy!). Next I added 1 spoon of @justegg for a little added protein and it sets up nicely in the air fryer!! For toppings did lots of spinach, sliced red onion, and a couple of dollops of ricotta, but you can add anything you want! •vegan creamy roasted garlic “alfredo” pasta• I honestly was never a huge fan of alfredo/white sauce pasta because it tends to make me feel just kinda eh after HAHA so I wanted to try to make a dairy free alternative that is full of roasted garlic flavor with lots of protein and super hearty without that heavy feeling after, and this did just that!!! The sauce base is tofu which makes this packed with protein and super creamy that you probs won’t even realize it’s vegan!!!!! •brown butter jaggery tahini chocolate chip cookies• I think this might be my favorite 🍪 ever-it’s warm and goooooey with crispy edges and melty chocolate in every bite + a toffee/nutty flavor from the brown butter and tahini 😍I used jaggery instead of brown sugar because it has more of a complex richness but if you don’t have it you can sub with dark brown sugar as well! I also used @justegg for an egg replacement but you can sub with the equivalent amount of egg! •vegan french toast• Sundays are for brunching!!! something I missed a lot from my childhood was french toast so i wanted to make an egg free version that’s just as yummy and cinnamon goodness filled 😋 i recently started getting @justegg and have been experimenting with it in so many different recipes, and this is definitely one of my favorites!! combine 2 tbsp @justegg , 1 tbsp any plant milk, 1/4 tsp cinnamon, pinch of salt, and 1/2 tsp maple syrup. Mix and gently soak a slice of bread for a couple of seconds on each side. Heat a pan with a little oil, and add your bread. gently spoon any remaining mixture on the side that’s facing up, then flip and repeat until golden on both sides. Part 3! Society has taught us to always keep chasing more. Go after the next thing. Pack as many things in our lives at once because it makes us feel like we are doing SOMETHING useful with our time. It has been ingrained in us that more is better but personally, this is far from what I believe is the truth. It's ironic because we constantly chase more because we think it will bring us more happiness, but in reality we are mostly left feeling unhappy and drained if we are only after things that bring us temporary gratification. The chase makes us feel like we always have to be happy and we therefore go after anything that we think will make us feel good. I think this past year if anything has taught me that redirecting my energy and focusing on a few meaningful things that make me feel fulfilled gives me so much more happiness than always feeling like I need to do more. Happiness isn’t just an absence of negative emotions- it is its own full body experience, and to feel that happiness we have to do things that enrich and fulfill us! I’ve felt so much more inner peace from going after what actually makes me happy and not doing things just for the sake of doing them. Quality over quantity! •vegan & raw chocolate chip cookie dough• I saw this all over my tiktok feed and tried it with a couple changes! Been a minute I know- life gets a lot sometimes. Honestly though it sort of plays into this next part of protecting your peace and that is setting healthy boundaries. This can be with yourself, those around you like friends, family, and loved ones, as well as your work! Everything you invest your energy in requires a healthy balance so you don’t go into overdrive mode, giving more than you have to offer. Remember the full glass analogy from the last part? Same idea. I honestly felt horrible when I started to set boundaries for myself-almost selfish? Like why am I not able to give unlimited love and help to the things and people I care about? Is me saying no or taking time for myself too self-centered of me? Answer is no. It’s not. Don’t gaslight yourself into feeling guilty about setting healthy boundaries. If someone is eating up your energy, you can take some space. If social media is draining, take a breather from it. Prioritize your mental health! 🧠💪🏽And trust me, people will much rather also prefer your help and presence when you yourself emit more positivity! So work on knowing what your threshold is and how to place yourself first.
