LAās best fried chicken sandwich might really be hiding inside a ghost kitchen in West Adams. @hokkaido.fried.chicken is bringing Hokkaido-style zangi to Los Angeles with a sandwich thatās wildly crunchy, ridiculously juicy, and stacked with miso vinaigrette slaw, pickled cucumbers, and chili truffle shoyu sauce on a buttery brioche bun.
Chef Ronuk Patel spent years snowboarding through Japanās northernmost island before teaming up with chef Gory to turn a family zangi recipe into one of the craziest chicken sandwiches in the city. And you can taste that influence immediately. The crust is craggy, crunchy, and aggressively crispy while the chicken underneath somehow stays insanely juicy. Every bite has that perfect balance of salty, savory, sweet, tangy, and a little heat creeping in from the sauce.
The fries deserve their own spotlight too. Golden crispy fries dusted with furikake that somehow disappear faster than the sandwich itself. They also make their own ranch dressing perfect for dipping, dunking, drizzling and pouring.
What makes this place even crazier is the fact that itās operating out of a lowkey ghost kitchen setup on West Washington Blvd. No giant flashy storefront. No overhyped gimmicks. Just a seriously dialed-in fried chicken sandwich thatās built like the chefs are trying to prove a point.
LA has no shortage of fried chicken sandwiches, but this one actually feels different. Japanese influence, insane texture, quality ingredients, and the kind of crunch you can hear through the phone speaker.

Words canāt describe this last week, have felt every emotion to the fullest, Iāve always wanted to open a restaurant/bar since I was a kid, and now that dream has become a reality.
