Was very tasty, maybe put a little bit much garlic in the pesto however. 2 cloves would have been plenty.
Toasted pine nuts are the way to go.

๐ Crispy sticky sesame chicken thighs with courgettes and rice.
Not from a specific region or country but heavy eastern Asian flavour influences. Was kinda an assortment of what I had in the fridge but was tasty non the less.
Ingredients:
- 1 Courgette
- 2-3 Garlic Cloves
- Chopped Freshed Coriander
- Grated Ginger
- 2 Deboned Chicken Thighs
- 1 tsp Cumin
- 1 TBS Hot Smoked Paprika
- Salt & Pepper
- Rapeseed Oil
- Basmati Rice
The Sticky Glaze
- Light Soy Sauce
- Sriracha
- Toasted Sesame Oil
- Honey
Garnish
- 1 Spring Onion
- White Sesame Seeds

๐ต๐น Fรญgados de Frango Piri-Piri is a Portuguese dish of chicken livers prepared with spicy piri-piri sauce. The name translates to "Piri-Piri Chicken Livers" in English.ย Which I've recently discovered used to be served at nandos. Traditionally served with a crusty bread roll and garnished with parley (I only had coriander and no bread roll but filling non the less)
Never cooked livers before, mainly because they looked unappealing but trust me they taste delicious in this dish, and they're dead cheap compared to chicken breast.
Secondly, welcome to this page, I hope to post an assortment of dishes and cuisines I end up cooking for the next few months at uni so look out for what is to come :)
Ingredients:
- 400g of chicken livers (from Sainsbury's)
- 1 red onion diced
- 3 garlic cloves
- Cracked black pepper
- Sea Salt
- 1/2 tsp Cayenne pepper
- 1-2 tsp Hot smoked Hungarian paprika (from Budapest sorry)
- 3-4 TBS piri piri hot sauce
- 1 TBS Double cream (optional if not more)
Garnish:
- Double cream drizzle
- Lemon juice
- Parsley (or coriander honestly)
- Extra Virgin Italian Olive Oil
- Salt & Pepper to taste
