I had a lovely chat with Streve Sando, visionary behind the brand and heard how he’s helping to bring heirloom beans back to the forefront of American kitchens.
What is so awesome about their work is their commitment to working with smallholder farmers to grow and preserve these incredible varieties.

Today im making Creamy Tuscan White Beans with tomatos, parmesan, and kale from the garden - and of course some crispy sourdough bread.
Give it a try, your gut will thank you!!
INGREDIENTS
8 Small to medium-sized tomatoes
½ Red Onion
½ White Onion
3 Cloves Garlic
Splash of white wine
1.5 Cups Parmesan Cheese
3 TBS Olive Oil
2 TBS Red pepper
3 Cups White Beans
1 Bunch of Kale
METHOD
Dice the onions (large chop) and cook down in 1 TBD of olive oil until soft - about 5-10 mins on med heat. Add the garlic (small chop) and a splash of white wine and cook down for another 5 minutes. Add the tomatoes and cook everything together on a medium/low heat for 15 minutes. Remove half the mixture and blend until smooth, then add it back together, and then ad your beans. Ad a healthy amount of Parmesan cheese. Mix in the chopped kale and ad sea salt and fresh cracked pepper to taste. Toast your bread with a little Oil and dig in!!!

There’s something about a slower morning, a pan bubbling away on the stove, and nowhere to rush off to. These smoky one-pan beans are exactly that kind of recipe simple and full of depth from just a handful of ingredients.
Sweet onions, garlic, peppers, bay, and a gentle kick of cayenne all come together into something really comforting, the kind of dish that feels like it’s been cooking for hours (but hasn’t). I love serving this piled onto great toast, topped with soft eggs, a crumble of feta, and a drizzle of olive oil simple, satisfying, and perfect for the long weekend. A good one for tomorrow morning 😘

Smoky One-Pan Beans (serves 3–4)
Ingredients
2 tbsp olive oil
1 large onion, finely sliced
4 garlic cloves, finely chopped
1 red pepper, sliced
1 tsp smoked paprika
1/2 tsp cayenne pepper
2 bay leaves
1 tbsp tomato paste
1 tbsp soy sauce or tamari
1 tsp maple syrup (optional)
2 x 400g tins beans (butter beans or cannellini), drained
1 x 400g tin chopped tomatoes
200–300ml vegetable stock
Salt and black pepper
Juice of 1/2 lemon or a splash of apple cider vinegar
Method/
Heat the olive oil in a large pan over medium heat. Add the onion with a pinch of salt and cook for 8–10 minutes until soft and slightly caramelised.
Stir in the garlic and red pepper and cook for a few minutes until fragrant.
Add the smoked paprika, cayenne and bay leaves, letting everything toast gently, then stir in the tomato paste and cook it out for a couple of minutes.
Pour in the chopped tomatoes, beans and vegetable stock. Add the soy sauce and maple syrup if using, then bring to a simmer.
Cook uncovered for 20–25 minutes until thickened and rich, stirring occasionally. Add a splash of water if needed.
Finish with lemon juice or vinegar, taste and adjust seasoning.
Serve on great toast with eggs, feta, chilli flakes and a drizzle of olive oil.

When your looking to get more beans into your life, and also love pasta - try this Creamy Chickpea Tomato Pasta with fresh basil and parm 🍝😍
INGREDIENTS:
1/2 Box Passata
1/4 Cup white wine
1 Shallot
3 cloves garlic
1 lg spoon of Marscapone
1/2 cup Parmesan cheese
1 Can Chickpeas
1 bunch chopped basil
1 tbs crushed chili flakes
1 box tomato puree
METHOD:
Sauté the shallots for 5 minutes on medium heat, then add the garlic and cook for another minute or so. Add the white wine and let it simmer for a few minutes. Ad the tomato puree and cook on medium heat for 5-7 minutes. Ad the mascarpone and mix well, then ad the basil and parmesan. Finally, mix in the cooked pasta and chickpeas. Then add your cooked pasta and chickpeas and mix everything well together. Serve with a little more parm, a dash of olive oil, and salt/pepper to taste.

It’s National Chickpea Day so I thought I’d show one of my favorite ways to use them- Crispy Chickpeas! Great for soups, salads, or just to snack on.
You could also used canned chickpeas- just drain, rinse, and dry them.
