A really beautiful treat! 38 month prosciutto we made from @lintonpasturepork (who are so admired for their beautiful heritage breed pigs). The fat on this is incredible and you can really taste that charc room. It’s not a huge portion. It’s $32 (which is well underpriced for how special it is)! Get it while you can, we’ll find you something nice to drink with it.

Shrimp Stuffed Agnolotti in a Sugar Cane Butter Sauce, Fried Shallots/Micro Cilantro
River’s Inspo: “This is an Italian-ified Vietnamese Sugarcane Shrimp (Chạo Tôm). When my family would go out for dinner it was often Vietnamese. Though the typical order was Búns all around, on special occasions spring rolls and Sugarcane Shrimp were ordered too. I always think of Sugar Cane Shrimp as a fun time”.

Summer ice situation! A very cute pair! Corn, ice cream and blueberry sorbet. Get them while you can and make sure to ask for ‘The Roland’. I bet it’s great on the corn 🌽 🫐
