So @world_bartender_day has come around yet again.
This last year i went through a lot of re-invention of self and my professional life, whilst balancing studies.
This provided a unique set of challenges which changed my perspective on what I value in life and also in the drinks and service I provide.
To highlight this I created a drink where i take a drink format and flip it, this drink is called Mirror Image for @the_blendnz@theblend_au , a sgroppino turned martini⌠because why not? Itâs fun, tasty, and a remarkably simple serve.

Why Midori? Its a drink that holds a place close to my heart due to the hospo shenanigans had with @howgoodaredrinks (photos attached) if this doesnât commemorate World Bartender Day for me, I dont know what else would.

This drink tells the story of Tamaki-Makaurauâs geological heritage and MÄori culture, while showcasing sustainable practices. The volcanic activity that formed the region of Auckland left behind fertile soil and a unique terroir perfect for growing crops.

Flor de Cana 12 Year Old Rum, known for its commitment to sustainability and eco-friendly production, serves as the foundation of the cocktail. Providing sweetness and strength to this Right Hand variation.
I always wanted to hero a drink that showcases MÄori subterranean cooking culture. Hangi Pit Bitters and Amaro utilise the addition of local root vegetable off-cuts, while the Burnt Earth Aroma adds a vegetal smokiness to the drink. The kumara crisp garnish also represents the fire from the volcanos that shaped our fertile land as well as provide a native ingredient that was harvested sustainably from it.
Volcanic soil is integral to the terroir of the local Waiheke wine that I turned into a vermouth. The soil is used physically in this drink through scorching local organic soil and incorporating it as an aroma.
All of these ingredients are crafted using waste or low-impact products, embodying the concept of recycling and minimizing waste.
We can harness the power of nature without destroying its resources. This cocktail showcases the commitment to recycling waste ingredients and minimizing environmental impact, resembling a metaphorical "scorched earth policy" focused on sustainability.

Back at home in New Zealand, whilst in the process of creating new drinks, I often found myself returning to old notes, recipes and stories for inspiration. I spent my winter nights next to wood fires, re-reading through my old leather bound recipe books, pad and pencil in hand adding little notes here and there for further development.
These memories sparked the inspiration for this drink.

- 3 dashes of Forest Floor Bitters
Pre-batched in a beeswax lined & sealed bottle, stirred down, served up.
Garnished with leather waxed twine and pine oil mist.

⢠60 ml. Dry Gin
⢠30 ml. Charred Lemon Juice
⢠20 ml. Garden Shrub
⢠15 ml. Thyme Gomme
⢠2 Dashes of Rhubarb Bitters
Served in Thyme-smoked glass or flask over crushed ice.
Chill glass and smoke. Add ingredients to shaker and shake, cap glass with ice, strain over top. Garnish.
Garnished with Salt & Vinegar Beetroot Crisp and Carrot leaf.
Garden Shrub
⢠1 part Roasted Beetroots
⢠1 1/2 part Brown Sugar
⢠1 part White Wine Vinegar
⢠1/2 part Roasted Garden Carrots
⢠1/2 part Balsamic Vinegar
Blitzed and Stored in fridge over 5 days. Fine strain into bottle.
