Klaus explored how suspicion, religion and folklore all shaped the story of the potato, alongside the remarkable journey that eventually made it such an important part of Irish food culture.

A short seasonal recipe using blackcurrant leaves and elderflower.
For the syrup, combine 1 cup of water and 1 cup of sugar in a saucepan and bring to the boil. Add blackcurrant leaves or elderflower, simmer briefly, then strain and allow to cool completely.
Served over strawberries, both combinations are perfect for this time of year.

"We recently had our wedding at the Fabulous Ballintubbert House, and from the very beginning we knew we wanted something non-traditional — a rustic vibe, a relaxed atmosphere, and most importantly, a fun experience for everyone. Ballintubbert and all the staff delivered that and more.
We loved being so involved in the little details of our day, from DIY projects to creating an experience where our guests could truly enjoy everything the venue has to offer — long walks around the beautiful grounds, amazing food, and a laid-back environment. We chose not to have a sit-down meal and instead had a food truck serving mouth-watering dishes that our guests absolutely loved.
Bronwyn, you were absolutely incredible. Ballintubbert House hosted the near Festival of Garden and Nature over the weekend.
A fantastic two-day event of gardening, food and art with a focus on sustainability.

This year's festival proved to be hugely successful and saw celebrity chef Rory O'Connell return to his Laois roots, along with fellow speakers Dan Pearson, Dominic West, Sarah Raven and Thomasina Miers.

Day two at the Festival of Gardens and Nature 🌿
A full day at Ballintubbert, with talks, demonstrations, lunch, walks through the gardens and conversations across the grounds.
Darina Allen joined Klaus Laitenberger for a session on lost crops, ancient growing methods and what could thrive in Irish soil.
In the afternoon, Darina introduced Mick Kelly and Carwyn Graves for Tír to Table, exploring food literacy, young people and reconnecting with the land.
There were sessions with Sarah Raven, Harriet Rix, Mathew Jebb, Katy Merrington, Jo Thompson, Catherine FitzGerald, Tom Coward, Isik Güner, John Anderson, Jimi Blake and many more.
Trees, lost crops, romantic gardens, wild gardening, botanical illustration, planting combinations and the future of food all found their place in the day.
And just like that, the final day of the festival has been and gone ☀️ What a Sunday it was 🌿
