Hot cross bun cookies. Hot cross cookies? HOT CROSS-KIES (?!) I’m not late, ok… but anyway in case you didn’t feel like taking out a second mortgage to make something chocolatey this Easter (…or in case you left it wayyy too late for your Easter Sunday lunch dessert) - here’s my recipe for Hot Crosskies. Crisp edge, chewy centre, brown butter-y goodness, perfectly spiced, and that little hit of orange which is soooo fresh. Everything you love about a traditional HCB but in a delicious cookie! Let me know if you make them !!! I want to see your versions! Happy Easter 💛🐰 INGREDIENTS (method in comments) - makes 12 110g unsalted butter 1tbs milk powder (optional but recommended) 80g caster sugar 80g brown sugar 1 large egg, room temp zest of 1 orange 1/2 tsp cinnamon 1/2 tsp ginger 1/2 tsp five spice 165g plain flour 1/2 tsp baking powder 1/4 tsp baking (bicarb) soda 1 tsp salt 100g mixed fruit (currants, mixed peel) and/or choc chips if you INSIST) For the crosses: 50g icing sugar, few drops of orange juice, sprinkle of ginger (optional)
