Same-Day Focaccia Recipe:
* 500g strong bread flour
* 420ml warm water
* 7g instant yeast
* 10g salt
* Olive oil to drizzle (a silly amount)
* toppings of choice and maldon salt to sprinkle
1. Mix flour, water, yeast, and salt (donât let yeast touch salt at first).
2. Rest 20 mins. Stretch + fold every 20 mins (x3) until dough is smooth + stretchy.
3. Drizzle with oil, cover, and let it double in size(~1 hr).
4. Oil a tray, tip dough in, prove 1 more hr.
5. Dimple with your fingers, drizzle more oil, sprinkle Maldon salt + toppings.
6. Bake 220°C (or as hot as your oven goes) ~20â22 mins until golden.
7. Enjoy!

Hereâs how to make the easiest, creamiest hummus and flatbreads from start to finish in about 20 minutes.

Hummus:
⢠1 jar M&S Giant Chickpeas
⢠1 garlic clove
⢠Juice of 1 lemon
⢠2 tbsp tahini
⢠M&S Greek Extra Virgin Olive oil
⢠Salt + pepper
⢠1 ice cube
⢠Splash of water (if needed)
Topping:
⢠half a jar of M&S Giant Chickpeas
⢠M&S Greek Extra Virgin Olive Oil
⢠Paprika
⢠Cumin
⢠Sumac
⢠Chopped parsley to garnish
Flatbreads:
⢠300g plain flour
⢠170ml water
⢠2 tbsp Greek Extra Virgin Olive Oil
⢠Pinch of salt
Add the chickpeas, garlic, lemon juice, tahini, salt, pepper, olive oil and ice cube to a blender. Blend until completely smooth and creamy, adding a splash of water if needed.
Crisp up some extra chickpeas in a hot pan with olive oil, paprika and cumin until golden and popping.
Spread the hummus onto a plate, top with the crispy chickpeas, paprika, cumin, sumac, chopped parsley and a really generous drizzle of olive oil.
For the flatbreads, mix the flour, water, olive oil and salt into a dough. Divide into 6, roll out, then cook in a really hot dry pan for 1â2 mins on each side until puffed up and lightly charred.
Tear, dip and enjoy!

Crisp, buttery puff pastry, a creamy leek and mascarpone filling, and roasted courgette ribbons on top.

RECIPE:
⢠1 medium leek
⢠Olive oil
⢠Flaky sea salt + black pepper
⢠Ancho chilli flakes
⢠2â3 courgettes
⢠1 tub M&S mascarpone
⢠1 garlic clove
⢠Zest of 1 lemon
⢠Ready-rolled all butter puff pastry
⢠1 egg (for egg wash)
⢠Sesame seeds
⢠Fresh basil
Thinly slice the leek and sautĂŠ in olive oil with salt, pepper and chilli flakes for ~5 mins until soft.
Let cool slightly, then mix with mascarpone, crushed garlic, lemon zest, salt and pepper.
Use a peeler to make ribbons from the courgettes. Toss with olive oil, salt and pepper.
Unroll puff pastry onto a tray and score a border.
Spread the mascarpone mixture over the base, add courgette ribbons.
Egg wash the border, sprinkle sesame seeds.
Bake at 200°C for 25â30 mins until golden and crisp.
Finish with fresh basil and serve warm.

This time last year I was preparing for my final biomedical science exam, feeling lost in life not knowing what was next for me. I could never begin to imagine what the following 12 months had in store for me. Since, I decided to fully devote my time to baking, my childhood dream.

How I make sourdough, start to finish!

Simple sourdough bread recipe using a dutch oven, this is my go to method I do every time:
INGREDIENTS:
900g strong white bread flour @allinsonsflour
210g active sourdough starter
18g sea salt @maldonsalt
625g water
METHOD:
Mix starter with water until dissolved
Add flour + salt, mix into a rough dough
Cover and rest for 30 minutes
Do a set of stretch & folds (with wet hands)
Rest for 30 minutes
Repeat twice more (3 sets total)
Leave to bulk ferment for 6â8 hours
(Until ~30% risen and less sticky)
Divide into 2, pre-shape
Rest for 20 minutes, then final shape
Place into floured baskets (rice flour)
Proof overnight in the fridge
Next day:
Dust with rice flour, score
Bake in a preheated dutch oven at 220°C
30 minutes lid on, 10 minutes lid off
Crusty on the outside, soft and airy inside

Ingredients:
⢠3 very ripe bananas
⢠120g Butter - browned (@allthingsdairy__ )
⢠30g oil
⢠200g soft brown sugar
⢠2 eggs
⢠1 tsp vanilla
⢠200g plain flour
⢠1 tsp baking powder
⢠½ tsp salt (@maldonsalt )
⢠1 tsp cinnamon
⢠200g chocolate chips
Method:
1. Brown the butter, melt until foamy and turns golden brown (â5 mins).
2. Mash bananas in a bowl.
3. Add sugar, eggs, vanilla, browned butter + oil and mix until combined.
4. Fold in flour, baking powder, salt, and cinnamon (donât overmix).
5. Stir through half the chocolate chips.
6. Pour into a lined 9x5 loaf tin, top with remaining chocolate.
7. Bake at 170°C fan for 45â55 mins until golden and set.
Save this for when you next leave your bananas on the counter đ
