I get to watch this happen again and again at Riverside Arts Market and Atlantic Beach Farmers Market.
Honestly one of the funnest parts of the market is watching someone accidentally discover their new favorite food.
Finally tried the @tysguiltfreepies everyone at the market keeps talking about.
Honestly, I avoided it for so long because when you make food for a living and are surrounded by sweets all day, you kind of try not to create one more thing you crave. Usually if I want dessert, I just eat our shrikhand.
But I had to see what the hype was about. Totally legit. The crust is full of nuts, the sugar isn’t refined, and now I understand why people keep coming back for it.

So we kept tweaking:
Labels. Packaging. Flavors. Meals. Grab-and-go options.
We tested at farmers markets for 2 years.
Then spent the last 5 years learning what actually moves off grocery shelves.
And standing in front of this fridge yesterday @dianesnaturalmarket I realized:
This is 7 years of slowly reshaping how people buy and eat Indian food.
And we did this in St. Augustine, a place where Indian restaurants used to struggle to survive.
