Wake up with the chickens and meet Peachy Jacobs, our master baker. Peachy’s day starts at 2am with kneading, mixing and proving. As croissants turn golden in the oven, the first chickens arrive – lured in by the scent of an early bird breakfast. “When bread rises in the oven and turns golden brown, and when you slice through it and see the air pockets – that’s what I love most,” says Peachy. Before she leaves, she always checks on Moeder, our twelve-year-old sourdough starter and the heart of her beloved apple waste sourdough loaf. Babylonstoren Minute 15 May 2026 🌦️🍷 The week began with stormy skies, icy rain and wild weather sweeping through the garden.
