Coconut Panna Cotta with Raspberry Coulis!

Coconut Panna Cotta
400ml Coconut milk/cream
1/2 cup fresh cream
1/2 cup Sugar
10g Gelatin
1/4 cup Cold Water
Soak the Gelatin in Cold water and keep aside to bloom.
Mix the Coconut Milk, Cream and sugar in a saucepan and bring to a simmer.
Remove from heat, add the bloomed gelatin and stir to dissolve.
Pour the mixture through a sieve and pour into moulds/ramekins to set. Keep refrigerated for at least 1.5 hours.
Unmould and pour topping of your choice.
I made the raspberry coulis with frozen raspberries, sugar and lemon juice, reduced on the gas, sieved and stored in the fridge.
