Falafel has always been about texture and balance.

I am from Haifa, where shawarma isn’t a trend it’s a standard. Every spit, every slice, every bite carries expectation.
At Avi Cue, nothing is accidental, Every element is deliberate. Every detail is measured: The skewer: perfectly stacked, balancing fat, lean, spice and heat. The pita: chosen for texture and flavor, the foundation of the sandwich. The meat: the best we can source, treated with precision, cooked to honor its flavor. The toppings: simple, authentic, essential tomato, onion, parsley. nothing extraneous. The sauces: tahini and Amba the subtle magic that completes the experience.
I didn’t open Avi Cue to reinvent shawarma, I opened it to do it right. To show Los Angeles what Haifa standards feel like. To invite people into a moment that is precise, intentional and unforgettable.
This is fast casual, but never casual about craft.

Scenes from my recent visit to @avi_cue to try his new falafel made with pistachios. It was outstanding but I was so distracted by @yourcaviarmom doling out @nugencaviar that I only got a few crappy shots of the actual falafel 🤣.
Avi Cue is becoming one of my favorite restaurants in the SFV. He got famous for his Wagyu pitas but then slowly started introducing new items to the menu that are honestly better than the Wagyu.
My favorites are the hummus, chicken shawarma, Wagyu beef shawarma and the new falafel. DO NOT SKIP THE HUMMUS.
