Opening in Dundee as part of a 12-month research pilot, the diner asks a simple but radical question: what if a good, affordable meal in a decent room was treated as everyday public infrastructure?

On 24 April 1932, approximately 400 young workers — mostly from Manchester, with a smaller Sheffield contingent — staged a mass trespass on Kinder Scout, the highest point in the Peak District. The land was owned by the Duke of Devonshire and kept exclusively for grouse shooting, patrolled year-round by gamekeepers despite being used for shooting only around twelve days a year. The trespass was organised by the Manchester branch of the British Workers’ Sports Federation, led by Benny Rothman, then aged 20, a Jewish anti-fascist mechanic and member of the Young Communist League.
Between 1940 and the early 60s, the British government ran over two thousand restaurants across the UK. Three courses. Commissioned artwork. Open to everyone. £3 in today’s money. What if we brought Churchill’s “British Restaurants” back?
