Throwback to Easter in the Lee Household 🌿
A table full of goodness. Slow-roasted lamb, salmon, roast potatoes, carrots and parsnips, rich gravy, and full bellies all round.
There’s something so special about gathering around food made with love. The conversations, the seconds and thirds, the quiet “mmms” between bites. One of my favourite kinds of memories.
Already looking forward to the next one.

Kept it nice and simple for dinner, just how we like it. 😍
Roasted sweet potato, flavour-packed chicken thighs, and some chargrilled broccoli on the side.
Easy, balanced, and absolutely delicious.

Creamy White Wine Bucatini with Mussels & King Prawns
Dinner the other night was absolutely delicious. I found this bucatini pasta in Aldi—it looks like spaghetti but it’s thicker and slightly hollow—and cooked it with mussels, king prawns, garlic, onions, and chestnut mushrooms.
Finished it with a white wine sauce and double cream for that rich, silky texture.
Every bite was packed with flavour. We all loved it. 🩷
Delicious cottage pie tonight, served with some tenderstem broccoli on the side—comfort food at its finest.
And just a quick FYI: cottage pie is made with beef mince, while shepherd’s pie is made with lamb mince. A small detail, but one that often confuses people! 🩷
Loved It So Much, I Made It Twice 😍
These turkey wings were so good, I had to run it back. What I didn’t mention last time is that I boiled the whole bag of turkey wings when I first bought them and froze them in Ziploc bags.
When I’m ready to cook, I just defrost, give them a fresh dry rub, and pop them into the oven or air fryer. Easy.
Served again with steamed plantain and veggies in gravy—this time: mushrooms, broccoli, and carrots.
The gravy was rich and flavourful, made with turkey stock and a little bit of Bisto for extra depth.
Absolutely delicious.
Here’s my current go-to meal for my one-year-old—she absolutely loves it.
I boil one ripe plantain (chopped) for no more than 10 minutes. Then pour in a can of mackerel fillets in tomato sauce, add a little black pepper and garlic, and let it all simmer together for another 5 to 10 minutes.
It’s high in protein, full of fibre, and honestly, I sneak a bite here and there too.
Try it for your little one or even the whole family. Who says baby food can’t be delicious? ♥️
Throwback to this lovely spread I made last Christmas. It was my first time making a whole turkey, and the cheesecloth method truly elevated it. So much flavour, so much succulence. If you’ve never heard of it, start doing your Googles now—I highly recommend.
We slow-roasted this big bird for 3 to 4 hours, basting continuously, and it came out beautifully. We also had salmon, beef, mac and cheese, potatoes, and all the extras.
And yes, turkey sandwiches lasted us for days after. It was phenomenal.
Looking forward to what this year’s feast holds. 😍
I love a one-sheet dinner. Everything roasted on one tray and packed with flavour.
I seasoned some chicken wings with complete seasoning, adobo, salt, black pepper, and garlic granules. Added in 3 diced sweet potatoes and got those roasting first.
Halfway through, I tossed on some broccoli and mushrooms, then added a few plum tomatoes right near the end so they wouldn’t overcook.
That was it. Dinner done.
Simple, nourishing, and minimal washing up. 💛
