Creamy miso chicken orzo with courgette 🍜
1. Season the chicken (paprika, herbs, salt, pepper, etc.), then cook it in a pan with a little oil until golden.
2. Add the garlic and chopped courgettes (I grated mine because I don’t like zucchini), then sauté for a few minutes.
3. Add the orzo directly into the pan and mix.
4. Pour in hot chicken stock with miso paste and let it cook, stirring, until the orzo absorbs the liquid.
5. Finish with parmesan and spinach, then a squeeze of lemon to brighten it all up ✨

I chose the phrase “Meet me at 12am” because I love the Disney movie Cinderella. In the story, Cinderella has to be home before midnight, but I will be out at that time, free to do what makes me feel alive and especially to celebrate my friend’s birthday at 12am!
