We go again!
Apiary are hosting me on June 21st for two seatings ā 1pm lunch and 6pm dinner, 26 seats each. Fatherās Day felt like the right occasion.
A few dishes on this menu are my dadās favourites ā mapo tofu, earthās 3 treasures ā so I reckon they might be yours too.
Every dish on here means something to me. The padron peppers fried through black bean sauce and black vinegar are a direct nod to the first restaurant I ever worked in.
This menu is my two worlds colliding, and I canāt wait to share it.

As we head into the Summer months, weāre changing our opening hours from Wed-Sun to Tue-Sat.
This allows us to host our Bee Experience Days on Sundays, as well as giving us the flexibility to host more weekend pop ups (of which we have a couple in the pipeline already to get excited about).
Also, having spent 2 years working every single weekend, having Sundays off means I can spend a bit more time with the family, which to be honest I canāt wait for. Might even see what these āSunday Roastsā are that people keep talking about š.
Starting from TODAY, we are open Tuesday.

š Beekeeping Season Day 2 š
The job you should have done in the wet winter months, but only get round to doing once the season is on the cusp of starting.
Cleaning old frames and putting in new wax foundation.
Not the most glamorous part of beekeeping, but one of the most essential tasks if you want to avoid scrambling when the peak season hits.
Soon itāll be time to open up the hives properly and see how weāre shaping up.

Pre-season checks at our two sites in Wivelsfield & Peacehaven.
This is the part of the year you approach with a certain trepidation. Did you do everything right last year? Were the colonies strong enough to get through winter? Is the weather good enough so as not to affect the hives too much?
We had a tale of two halves.
Our Bee Tree Vineyard site is looking strong & healthy. Should be a good season there this year. šŖ
Peacehaven however was not such good news. Weāve lost a few colonies at that site this winter, and opening a dead hive is easily the worst part of this job. Some beekeepers who work on a larger scale than us just chalk it down to weak hives and move on, but we are still very much attached to our bees, and feel the losses deeply.
That said, we do have some super exciting plans for this season, and we plan to increase the number of hives we have significantly, as well as taking on another site in Ditchling.
The pre-season is a tricky one, and itās not always fun & joyous, but once the sun starts shining, it should be a cracking year ahead!
