HOW TO
📌 Pan-fry halloumi until golden
📌 Add grapes to the same pan until blistered, drizzle with honey
📌 Serve with warm koulouri

FOCACCIA CHARCUTERIE đź§€
Baked Fromager d’Affinois nestled into golden, dimpled focaccia, then surrounded by charcuterie, olives, pickles, and a spoon of honeycomb. It’s the ultimate tear-and-share centrepiece
🍞 Serves: 6–8
⏱ Prep: 15 min | Proof: 1.5–2 hrs | Bake: 25 min
FOCACCIA DOUGH
500g (3⅓ cups) baker’s flour or plain flour
5g (1 tsp) fine salt
7g (2ÂĽ tsp) instant dry yeast
350ml lukewarm water
30ml (2 tbsp) olive oil, plus extra for tin & finishing
Topping & Garnish:
150g @fromagerdaffinois_au
2–3 tbsp extra virgin olive oil
Sea Salt, Salami, Prosciutto, Olives, Gherkins, Honeycomb
HOW TO
1. Mix flour, salt & yeast (keep separate at first). Add water + oil, stir, knead briefly.
2. Proof 1.5 hrs until doubled.
3. Press into an oiled tray. Rest 30–40 mins.
4. Dimple dough with oiled fingers. Nestle the @fromagerdaffinois_au in the centre. Drizzle oil & scatter sea salt + rosemary (if using).
5. Bake 200°C (fan 180°C) for 25 mins until golden & puffed.
6. Cool slightly. Garnish with charcuterie & honeycomb. Serve warm đź’Ą

What a day at school! ✏️
Had the absolute best time today as guest chef @newingtoncollege_official speaking with the students about careers, creativity and following your passion.
Started the day with the Year 8 boys, sharing stories from my journey and giving away some of my signature @mask_co
Heading into the kitchen with the Year 11 & 12 Home Economics students.
Together we designed and presented a 5-course lunch menu and I was honestly blown away by the talent, energy and ideas in the room. Of course had to serve some @fromagerdaffinois_au PETIT
Seeing young people so excited about food, hospitality and creativity is exactly why I love doing this.

BANANA FUN-DAE
One of my FAV smells out of the 6 selections @mask_co Sweet Treats… Here is the recipe now buy the smell….
🍫 CHOCOLATE BROWNIE
NEED đź›’
½ cup (100 g) unsalted butter
1½ cups (250 g) dark chocolate, chopped
½ cup (100 g) caster sugar
½ cup (100 g) brown sugar
3 large eggs
Âľ cup (100 g) plain flour
ÂĽ tsp baking powder
1 tbsp cacao powder
1 tsp vanilla paste
Pinch sea salt
HOW TO
🍨 Melt butter + chocolate until smooth.
🍨 Whisk eggs + sugars until combined.
🍨 Add chocolate mix, whisk through.
🍨 Fold in sifted dry ingredients + vanilla + salt.
🍨 Bake at 165°C fan for 25–30 mins (fudgy centre).
🍨 Cool completely, cut into cubes.
🍫 CHOCOLATE FUDGE SAUCE
NEED đź›’
ÂĽ cup (50 g) dark chocolate, chopped
½ cup (125 ml) thickened cream
ÂĽ cup (50 g) brown sugar
2 tbsp (25 g) unsalted butter
1 tsp vanilla paste
Pinch sea salt
HOW TO
Combine all ingredients in a saucepan over medium heat.
🍌 SUN-DAE BUILD
Banana + Napoline ice cream + brownie cubes + whipped cream + peanuts + warm fudge + cherry on top.
