Our new Ricotta Gnocchi uses mushroom 🍄🟫 ragu, fonduta(aka 🧀 cheese sauce), and toasted pine nut to finish. Big on the umami from the mushroom ragu. Liquid cheese is the perfect pasta ingredient. Every bite is pillowy goodness! And that’s just one of our new offerings for the season! 🥂

Rising Star Bartender Joe Arakawa (@thatguyjoe808 ) presented by @campariacademy of Anima by EDO (@animabyedo ) started out as a teenager cooking, cleaning, and bussing tables at his mother's restaurant in Hawaii, but followed his father's lead into the Army instead, doing tours in Iraq and Afghanistan before returning home in 2013. He found his way back to hospitality as a barback at Eight50 under Kelly Jeffers, then followed her to Rising Stars alum Ed Kenney's Mud Hen Water, where he picked up his first bartending shifts and dug into local sourcing.
After another deployment and a stint contracting for the Navy, Arakawa committed fully to the bar, running the program at Pai Honolulu under Chef Kevin Lee before sharpening his operations chops at Square Barrels under Restaurateur Hideo Simon. The pandemic eventually brought him to Las Vegas and Anima by EDO, where he stepped into the beverage director seat and now oversees the group's program corporate-wide. He also leads the Las Vegas chapter of the USBG and runs Spirit & Seoul, a Korean-inspired cocktail pop-up, with Bartender Jennifer Yim.

Carbonation and umami drive the Ball So Hard at Anima by EDO (@animabyedo ), where Rising Star Bartender (presented by @campariacademy_us ) Joe Arakawa (@thatguyjoe808 ) builds the drink from Scotch and clarified Korean doenjang water treated like a milk punch. Green apple cordial and lemon bring the acidity into focus before the cocktail is force-carbonated.
The drink grew out of Arakawa’s Korean-American pop-up project, Spirit & Seoul, where miso-based sodas became a recurring theme. In this version, the fermented depth of the miso threads through the Scotch’s caramel notes while the apple keeps the profile sharp and refreshing. Savory, lightly salty, and sparkling, it lands squarely in Arakawa’s lane: technical drinks that still feel direct and drinkable.
