A meaningful exchange as Chef Andersen Lee visits Huaiyang master Wayne Wang Jun at Pu Jiang Xuan, set within the Shanghai International Convention Center Oriental Riverside Hotel—where tradition, technique, and terroir converge over the Huangpu. 淮揚菜大師王俊 - 浦江軒江景餐廳 – 上海國際會議中心東方濱江大酒店 - This is new wave discovery - This season’s yanduxian (salted pork, spring bamboo shoot in knife fish broth 醃篤鮮) tells a deeper story. Rooted in Huizhou and cherished across Jiangnan, it is a dish of restraint and precision: cured pork for depth, fresh pork for clarity, and a slow, patient simmer that draws everything into quiet harmony. Spring bamboo shoots lend their fleeting sweetness, unadorned, untouched. Elevating it further, the broth is enriched with 刀鱼 (Chang Jiang knife fish - Tapertail anchovy)—one of the Yangtze’s prized “three treasures” alongside river pufferfish and shad. Rare, delicate, and intensely seasonal, it brings a refined, almost ethereal umami to the pot. The result: a milky, luminous broth—silken yet structured. Pork tender yet composed. Bamboo shoots crisp, sweet, and fleeting. By the river, with the Bund unfolding in the distance, each spoonful feels like Jiangnan in motion—subtle, poetic, and quietly luxurious.
