#AD I partnered with @TullamoreDEW with one goal: to track down the Irish wolfhound at their St. “Practice” Day event and get an interview. The problem was there were a lot of distractions. They had live music, personalized swag, plenty of food, and bar games. Eventually I found Emmy, the star of the night, and secured my interview. All in all, I’d say it was a very successful night of festivities and investigative journalism.

THE NA BLACK TEA OLD FASHIONED
2.5 oz (75 ml) Tea base*
1/2 oz (15 ml) rich Demerara syrup (2:1 sugar:water)
1 swath orange peel
Expressed orange oil, peel, and cocktail cherry for garnish
Add all ingredients, regal stir over ice for 10-15 seconds (do not over dilute this!). Strain over ice. top with additional orange oil and garnish.
*OLD FASHIONED TEA BASE
Phase 1:
2 cups (480 g) water
10 whole cloves
4 allspice berries (cracked)
1 cinnamon stick
1 tsp cocoa nibs
1/2 vanilla bean (cut & scraped)
1/8 tsp red chili flakes
Phase 2:
2 tea bags English Breakfast black tea
2 tsp Lapsang Souchong black tea
2 swaths orange peel
Pinch of salt
- In a small pot, bring water to a boil. Reduce heat to low and add all Phase 1 ingredients. Simmer covered for 10 minutes. Turn off heat, add Phase 2 ingredients, cover, and steep for 5 minutes. Strain and allow to cool.
Store tea base in fridge and use ASAP.

The Pink Pearl (Non-Alcoholic)
1 small egg white* (sub 3/4 oz. aquafaba for egg-free)
3/4 oz. (22.5 ml) @portlandsyrups x Anders Grenadine
1.5 oz. (45 ml) grapefruit juice
1/2 oz. (15 ml) fresh lemon juice
Combine all ingredients. Dry shake well to emulsify the egg. Add ice and wet shake for ~15 seconds. Double strain into a chilled glass. Top with expressed grapefruit oil and cocktail cherry for garnish.
As always, quality grenadine is KEY here. (Get mine)

PEAR CHAMPAGNE GRANITA
• ¼ - ⅓ cup Pear Granita**
• 2-3 oz (60-120 ml) Champagne (or other dry sparkling wine)
• Expressed lemon oil & pear slice for garnish
**PEAR GRANITA
• 3 cups (~710 ml) pear nectar (MUST have minimum 25g sugar/8 oz serving! Any less won't be sweet enough)
• 1 cup (~237 ml) Rothman & Winter Orchard Pear Liqueur
• 12 dashes Angostura Bitters (24 from Japanese dasher)
---- Combine ingredients, pour into a shallow pan, and freeze for one hour. Use a fork to scrape the ice crystals from the edges into the center. Repeat every 45 minutes until flaky (3-4 times).

I came up with the Lonely Penguin about 8 years ago - it's a tropical-inspired drink that's a Valentine's Day hit whether you've got a special someone or if you're feeling like a solitary penguin yourself.
Recipe below (or dig into my YT archives to watch the video). Hope you all have the best weekend ❤️
The Lonely Penguin
1.5 oz. (45 ml) rye whiskey
1/2 oz. (15 ml) crème de mûre
3/4 oz. (22.5 ml) cream of coconut
3/4 oz. (22.5 ml) fresh lemon juice
1/4 oz. (7.5 ml) semi-rich simple syrup (1.5:1 sugar:water)
2 dashes Angostura bitters
Garnish: 2 cocktail cherries (eyes), orange wedge (beak), 2 pineapple fronds (flippers), & cocktail umbrella for garnish (arranged to look like a penguin)
⁃ Combine everything except garnish in a shaking tin. Add a small of amount of crushed ice and shake. Open pour onto more crushed ice in a snifter.

It’s my absolute joy to announce that Azusa and I exchanged vows in the mountains of New Zealand in November. We’ve been partners in building a business together, in raising our dog Freya, and now, partners in life.
