At just 100g/L, Algebra has the minimum legal sugar content for a liqueur. This makes it extra dry indeed and lends our liqueur a surprisingly light mouthfeel (closer to that of a Vermouth, if - like us - you're into aromatised wines).
More importantly, it gives us nowhere to hide.
Sugar can work a lot of small wonders when developing a drinks recipe (be it a spirit, a cocktail or a soda). It works as a flavour enhancer, lends body and persistence. It is also the easiest and cheapest way to mask off-notes in base spirits and flaws in flavour extraction.
So working to a minimal sugar content (and not replacing sugar with any other sweetener, of course) was like cutting loose the safety net in our recipe development. A little scary at first. But so exciting when we landed on a recipe which worked.

Coffee goes with everything. One of our favourite simple serves is Algebra topped with fresh mint soda (which is a lot easier to make than it sounds). Because I'm old enough to remember the 1990s and living in London for 20+ years has given me a fondness for puns, we've called this drink the Mint Eraser (it's not a bad thing if you have no clue what kind of disco drink the 1990s "Mind Eraser" actually was).
Coffee goes with everything. Prepping for drinks we can't wait to share in Marseille soon at @paloma_marseille on Wed night and then on the La Marzocco France roadshow date on Thurs night.
Breaking our own fundamental rules, it's always fun to demonstrate in liquid form that Algebra + Tonic does NOT equal Tonic + Algebra. Fortunately, it all makes sense to our physicist friends who'll gladly chip in on partial phase separation. Not pictured, but quite critical to both versions of this simplest banger (yep, that's the accurate technical term) of a drink, is a little coin of expressed orange peel.
